Roasted Fingerling Potatoes with Chive Pesto

Preheat oven to 425°. In a medium bowl, toss potatoes with 1 Tbsp
- 1 3/4 lb. fingerling potatoes, halved lengthwise
- 1 Tbsp. plus 1/2 cup extra-virgin olive oilt
- Kosher salt and freshly ground black pepper
- 1/2 cup (packed) chopped fresh chives, plus more for garnish
- 1/2 cup (packed) chopped fresh flat-leaf parsley
- 2 Tbsp. slivered almonds, chopped walnuts, or pine nuts
- 1 garlic clove
- 2 tsp. fresh lemon juice
Fish Stock

Rinse fish bones and trimmings with cold water; drain
- 1 1/2 lbs fish bones and trimmings
- 4 cups cold water
- 1 1/2 cups dry white wine
- 1 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp ground thyme or 2 tsp fresh chopped thyme leaves
- 1 large celery stalk, chopped (about 1/2 cup)
- 1 small onion, sliced
- 3 mushrooms, chopped
- 2 sprigs parsley
- 1 bay leaf
Baked Brown Sugar Oatmeal

Whisk together oil, eggs, and sugars; set aside
- 1/2 cup oil
- 2 eggs, beaten
- 1/2 cup brown sugar, packed

Impossible French Apple Pie

- 6 cups sliced pared apples
- 1 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 2 eggs
- 3/4 cup milk
- 1/2 cup Bisquick
- 1 cup sugar
- 2 Tbsp. margarine (soft)
Seafood Clam Chowder

Clean the clams and place them in a large pot along with the garlic and water
- 4 quarts littleneck clams (about 1 2/3 cups) cooked and chopped
- 1 clove garlic, chopped
- 1 cup water
- 2 oz. salt pork, finely chopped
- 2 cups onions, chopped
- 3 tbsp flour
- 1 1/2 pounds potatoes, peeled and diced into 1/2” cubes
- 1 1/2 cups clam broth
- 3 cups fish stock
- 2 cups light cream
- Oyster crackers (optional)
Mustard-Crusted Roast Chickens

Make the mustard paste: In a small bowl, combine the mustard, shallots, garlic, and thyme, along with 2 tsp
- 1 cup Dijon mustard
- 1/2 cup minced shallots (about 2 large)
- 1/4 cup minced garlic (12 to 16 cloves)
- 2 Tbs. chopped fresh thyme
- Kosher salt and freshly ground black pepper
- 2 whole chickens, about 3-1/2 lb. each
- 5 Tbs. extra-virgin olive oil for drizzling
Tomato Sauce

Heat oil until hot but not smoking
- 2 - 1 lb. (12 oz. each) cans crushed tomatoes
- 1 Tomato can cold water (more or less to desired thickness)
- 4 oz. grated Romano cheese
- 12 oz. olive oil
- 10 oz. diced onions
- 1 oz. chopped fresh garlic
- 1/2 oz. chopped fresh Italian parsley
- 3 oz. sherry cooking wine
- 2 tbsp salt
- 2 tsp. oregano
- 1/2 tsp crushed red pepper
- 1/2 tsp black pepper
- 2 tsp basil
Fancy Cabbage Piggies

This is an easier take on the classic "pigs in a blanket"
- Brown 1 lb. ground beef; then add:
- 1 small finely chopped cabbage in bottom of 9 x 13 deep dish pan.
- 1/2 cup onion
- 1/2 cup uncooked rice
- 1/2 tsp. salt and pepper to taste
- Then pour over cabbage.
- Combine 1 can of condensed tomato soup and a can of tomatoes (about 1 1/2 cups).
- Pour over the ground beef mixture.
- Layer 1/2 cup cheese on top.
