- 1 stick unsalted butter
- Kosher salt
- Pepper
- Four 12-ounce bone-in pork rib chops, cut 1 inch thick
- 1/4 cup extra-virgin olive oil
- 3 garlic cloves, crushed
- 1 sage sprig
- 1 teaspoon fresh lemon juice
- 2 pounds Swiss chard, stems discarded and leaves chopped
Cajun Pepper Fish

Melt butter and coat fillets in oil - coat both sides of fish with dry mixture
- 1 tsp. paprika
- 1/4 tsp. cayenne pepper
- 1 tsp. pepper
- 1/2 tsp. onion powder
- 1 tsp. dried thyme
- 1 tsp. dried basil
- 1 tsp. garlic powder
- 1/4 tsp. dried oregano
- 2 tbsp. butter
- 1 tbsp. olive oil for frying the fillets

- 2 pounds Boneless Skinless Chicken Breasts (cut into 1 1/2-inch pieces)

- 6 tablespoons Corn Starch
- 3 tablespoons plus 1 tablespoon Vegetable Oil (separated)
- 1/4 cup Low Sodium Soy Sauce
- 2 tablespoons Sambal
- 2 tablespoons Honey
- 2 tablespoons Orange Juice
- 1 tablespoon Sesame Oil

In a small bowl, mix the olive oil with the wine

- 2 tablespoons dry white wine
- 2 cups all-purpose flour
- 1/4 cup sugar

- 4 large egg yolks
- 4 tablespoons cold, unsalted butter, cut into small pieces
- 2 medium-firm, tart-sweet apples such as Staymans, Winesaps or Granny Smiths—peeled, cored and coarsely chopped (2 cups)
- 1 cup coarsely chopped walnuts
- 1/4 cup sugar
- 1/2 cup golden raisins
- 1/4 cup pine nuts
- 1 teaspoon cinnamon
- 2 tablespoons anisette or Sambuca
- 1 large egg, beaten

- Cherry Coconut Filling:
- 1/2 pound oleo or butter (we use butter)
- 2 pkg. dry yeast - sprinkle on top of 1 cup warm water (not hot!)
- 2 tbsp. sugar (sprinkle this on top of the water with yeast and watch it bubble!)
- 4 cups flour
- 2 egg yolks
- 1 tsp. salt
- 1 lb. bag of grated coconut
- 1 jar of cherries; chopped to your liking (I splash a bit of cherry juice to make it a pretty color - but be careful you don't want it wet.)
Dressing (For Tossed Salad Or Hoagies)
