Fettuccini with Sweet Corn and Dill

Place a small bowl in a larger bowl inverted
- 8 * 8 ears of corn, peeled
- 1 1/2 * About 1 1/2 cups chicken stock
- * Salt
- 1 * 1 pound fettuccini, tagliatelle or egg tagliatelle
- 1 * 1 tablespoon EVOO – Extra Virgin Olive Oil
- 6 * 6 slices smoky bacon, chopped
- 1 * 1 bunch sweet green Vidalia onions thinly sliced or 3 medium leeks, trimmed and thinly sliced whites and greens, washed and dried
- 3 to 4 * 3 to 4 cloves garlic, finely chopped
- 1 * 1 small red chile pepper, seeded and finely chopped
- 7 to 8 * 7 to 8 stems of fresh thyme, leaves finely chopped, a couple of tablespoons
- 2 * 2 tablespoons butter, cut into small pieces
- 1/4 * About 1/4 cup dill, a generous handful, finely chopped
- * Freshly grated parmesan or Parmigiano-Reggiano cheese
Beef Stroganoff Burgers Knife-and-Fork

In a bowl, combine meat with Worcestershire, salt, pepper and herbs
- 2 · 2 pounds ground sirloin
- 1/4 · 1/4 cup Worcestershire sauce
- · Salt and pepper
- 1/4 · 1/4 cup flat-leaf parsley, finely chopped
- 1/4 · 1/4 cup finely chopped chives
- 1/4 · 1/4 cup finely chopped dill
- 2 · 2 tablespoons EVOO – Extra Virgin Olive Oil, divided
- 3 · 3 tablespoons butter, divided
- 1/2 · 1/2 pound white mushrooms, thinly sliced
- 1 · 1 small onion, chopped
- 1 · 1 large clove garlic, chopped
- 2 · 2 tablespoons flour
- 1/2 · 1/2 cup dry white wine
- 2 · 2 cups beef stock
- 1/2 · 1/2 cup sour cream
- 4 · 4 slices good quality white Pullman bread
- 4 · 4 deli pickles, dill or garlic, halved
- · Sliced or halved radishes, lightly salted
Blueberry Blast Smoothie

Put all ingredients into a blender and blend until smooth
- 1/2 cup nonfat or 1 percent lowfat milk
- 1/2 cup non fat plain yogurt
- 1 cup frozen blueberries (unsweetened)
- 1 teaspoon honey
Balsamic Glazed Steak Rolls

Rub each side of the steak slices with a little extra virgin olive oil
- For the Rosemary Balsamic Glaze:
- 8 th in slices sirloin or flank steak (length and width according to personal preference)
- Extra virgin olive oil
- Salt and freshly ground black pepper
- Fresh rosemary, chopped
- 1 red bell pepper, sliced into thin strips
- 1 green bell pepper, sliced into thin strips
- 1 medium zucchini, sliced into thin strips
- 1 medium yellow onion, halved and then thinly sliced
- A few white button or cremini mushrooms, cut into thin strips
- 1 teaspoon extra virgin olive oil
- 1 large clove garlic, minced
- 1/4 cup dark balsamic vinegar
- 2 tablespoons dry red wine
- 2 teaspoons brown sugar
- 2 sprigs fresh rosemary
- 1/4 cup Progresso™ beef flavored broth
Bacon, Lettuce and Fried Green Tomato Sliders

Bake bacon in preheated oven at 375˚F to crisp on slotted pan in middle of oven, 15-18 minutes
- 8 * 8 slices smoky bacon, halved across
- 2 * 2 green or very under-ripe, firm tomatoes
- * Salt
- * Pepper
- * Flour, for dredging
- 2 * 2 eggs or egg whites, beaten
- 1/2 * 1/2 cup breadcrumbs
- 1/3 * 1/3 cup corn meal
- 1/3 * 1/3 cup grated Parm cheese
- * A handful of flat-leaf parsley, finely chopped
- * Canola or light olive oil, for shallow frying plus a drizzle
- 1 1/2 * 1 1/2 pounds ground beef - sirloin for leaner burgers or chuck for buttery burgers
- 3 to 4 * 3 to 4 tablespoons grated onion and its juice
- 2 * 2 tablespoons hot sauce, such as Frank’s Red Hot, eyeball the amount
- 2 * 2 tablespoons Worcestershire sauce, eyeball the amount
- 1 * 1 cup sour cream
- 1 * 1 clove garlic, grated or pasted by finely chopping and mashing with salt
- * A few tablespoons minced fresh chives
- * Juice of 1/2 lemon
- 8 * 8 slider rolls or dinner size brioche rolls, split
