- Shallot-herb vinaigrette:
- 1 cup farro, rinsed
- 2 tablespoons extra-virgin olive oil
- 1/4 red onion, diced
- 2 garlic cloves, minced
- 5 shiitake mushrooms, cleaned, stemmed and thinly sliced
- 5 kalamata olives, pitted and thinly sliced
- 4 sun-dried tomatoes, thinly sliced
- 3 ounces Feta, crumbled (plus extra for garnish)
- Salt and pepper to taste
- 3 tablespoons minced shallot
- 2 garlic cloves, minced
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 2 tablespoons minced Italian parsley
- 1 tablespoon minced oregano
- 2 teaspoons thinly sliced mint
- 2 teaspoons minced marjoram
- 1 teaspoon thinly sliced chives
- 1/2 –2/3 cup extra-virgin olive oil

- 8 cups regular rolled oats (not quick cooking)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamon
- 1/4 teaspoon ground nutmeg
- 2 teaspoons sea salt
- 1 cup flavorless oil (safflower, canola, etc.)
- 1 cup maple syrup
- 2 teaspoons pure vanilla extract
- 1 1/2 cups chopped raw walnuts
- 1 1/2 cups sliced raw almonds
- 1 1/2 cups unsweetened coconut flakes

- 1/2 cup granulated sugar
- 1 stick unsalted butter, finely diced and chilled, plus 2 tablespoons
- 1 1/2 cups all-purpose flour
- 1 1/2 cups light brown sugar
- 3/4 cup rolled oats (not quick-cooking)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon fine sea salt
- Scant 1/2 teaspoon ground cardamom
- Crème fraîche or vanilla ice cream, for serving
