Mushrooms in Paris Plate

1. Start off by washing and drying your chard very well
- Chard Salad:
- 1 bunch rainbow chard, washed/chipped into thin ribbons
- dressing:
- 1 1/2 Tbsp tahini
- 1 Tbsp maple syrup, grade B
- 2 Tbsp Apple Cider Vinegar
- 1 tsp extra virgin olive oil
- pinch of salt + pepper
- Tofu Spicy Crumbles:
- 12 ounces extra firm or firm tofu, pressed
- 2-4 tsp salted fajita spice blend, Penzey's Spices used (or another favorite spice blend)
- 1-2 tsp extra virgin olive oil
- salt + pepper to taste if needed
- Peppered Mushrooms:
- 1 Tbsp extra virgin olive oil
- 1/2 cup white or sweet onion, chopped
- 4 cups sliced mushrooms (shiitake + chanterelle used)
- 2 cloves garlic, roughly chopped (keep in large pieces to prevent burning)
- 1 sprig of rosemary
- 2 Tbsp apple cider or balsamic vinegar OR red wine (use caution when adding to a hot pan)
- 1/4 - 3/4 tsp fine black pepper (to taste)
- salt to taste (a few pinches should be enough)
- 2 radishes, thinly sliced

In a large bowl, combine 1 cup flour, sugar, undissolved yeast, and salt
- 3 to 3 -1 / 2 cups all-purpose flour
- 1 / 4 cup sugar
- 1 envelope FLEISCHMANN’S RapidRise Yeast
- 1 teaspoon salt
- 1 / 4 cup water
- 1 / 4 cup milk
- 1 / 2 cup butter or margarine
- 2 large eggs
- Coconut Pecan Filling (recipe follows)

Curried Broccoli with Grilled Tempeh

For the rice: Thoroughly rinse the rice in a fine mesh colander
- 1 cup uncooked brown basmati rice
- 1 tablespoon coconut oil
- One 8-ounce package tempeh
- 2 tablespoons toasted sesame oil
- 1 tablespoon minced garlic
- 1 tablespoon peeled and minced fresh ginger
- 1 medium yellow onion, thinly sliced
- 2 3/4 cups coconut milk
- 2 tablespoons agave nectar
- 1 1/2 tablespoons nama shoyu or tamari
- 1 1/2 teaspoons curry powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon crushed red pepper flakes
- 2 cups fresh broccoli florets
- 1 1/2 teaspoons chopped fresh cilantro
- Fresh cilantro leaves, to garnish
- Black sesame seeds, to garnish
