E's Samosa Wraps

You can make this with crumbled, non-frozen tofu but you may not need much or any water
- 1 pound (450 g) red or gold potatoes (about 2 medium)
- 14 ounces (390 g) extra-firm tofu, frozen for 24 hours and thawed
- 1 medium onion, minced
- 1 cup (236 ml) frozen green peas
- 1 medium tomato, diced
- 1 tablespoon fresh ginger, peeled and minced
- 1/2 - 1 jalapeno pepper, stemmed, seeded and finely diced
- 1/2 - 3/4 cup water
- 1 teaspoon salt to taste
- 2 teaspoons curry powder
- 1/2 teaspoon ground coriander
- 3/4 teaspoon ground cumin
- 1/8 - 1/4 teaspoon cayenne pepper (or to taste)
- 1 tablespoon lemon juice
- 6 whole-grain tortillas (may use gluten-free)
Spicy Cucumber Soup

This is a very spicy soup
- 2 tablespoons olive oil
- 1/2 onion, chopped
- 2 teaspoons minced garlic
- 2 cucumbers, peeled, seeded and chopped
- 2 yukon gold potatoes, cooked
- 1 cup vegetable broth
- 1/2 cup soy or almond milk
- 2 tablespoons soy sauce
- 1 teaspoon dried parsley
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon cayenne pepper
- 2 teaspoons curry powder
- 1 teaspoon sesame oil
Mac And Thai

Instead of the white beans, you may substitute 1 1/2 cups crumbled firm tofu, if you like
- Ingredients:
- 1 1/2 cups cooked white beans or 1 (15.5-ounce) can white beans, rinsed and drained
- 1/4 cup plain unsweetened almond milk or other nondairy milk
- 2 tablespoons nutritional yeast
- 5 scallions, minced
- 2 tablespoons freshly squeezed lime juice
- 1 teaspoon rice vinegar
- 1 teaspoon peanut butter
- 1/2 teaspoon garlic powder
- Salt
- 3 cups cooked linguine or soaked rice noodles (6 to 8 ounces before cooking)
- 1 tablespoon vegetable oil or 1/4 cup water
- 1/2 cup chopped red onion
- 6 ounces asparagus, trimmed and cut into1-inch pieces
- 2 garlic cloves, minced
- 1 small carrot, peeled and shredded
- 1/2 red bell pepper, seeded and chopped
- 1 cup thinly sliced white mushrooms
- 2 tablespoons wheat-free tamari or vegan oyster sauce
- 1 tablespoon natural sugar
- 1 teaspoon Asian chili paste (optional)
- 2 tablespoons water
- 6 grape tomatoes, halved lengthwise
- 3 tablespoons crushed unsalted roasted peanuts
- 2 tablespoons chopped fresh cilantro or Thai basil
- Lime wedges, for serving

- 1/2 cup minced onion
- 1 jalapeño, seeded and roughly chopped

- 1 teaspoon sea salt
- 1/2 teaspoon ground cumin

- 1 cup (150 grams) all-purpose flour
- 1 cup (185 grams) semolina flour, plus more for shaping the pasta

- 2 1/2 cups Perfect Pastry Blend or King Arthur Unbleached All-Purpose Flour
- 3/4 teaspoon salt
- 1/3 cup vegetable shortening
- 1/2 cup (1 stick) cold unsalted butter
- 7 to 10 tablespoons ice water
- 8 cups sliced apples
- 2 tablespoons lemon juice
- 3/4 cup sugar
- 2 tablespoons King Arthur Unbleached All-Purpose Flour
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon allspice
- 1/4 cup boiled cider or undiluted apple juice concentrate
- 2 tablespoons butter, diced in small pieces
