Vegetarian Chili I

Chili is right up there with my vegetable curries at the top of my list of favorite dishes
- 1 pound small red chili beans
- 4 cups bouillon, or more as needed
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 stalks celery, chopped
- 1 green pepper, chopped
- 2 dried red peppers, crushed, or 1/4 tsp cayenne pepper or to taste
- 4 tbsp chili powder
- 1 tsp oregano
- 1 tsp cumin
- 1 can (28 ounces) plum tomatoes, chopped
- 1 cup bulgur
- 1 cup frozen corn
- 2 tbsp Worcestershire sauce
- Cilantro, chopped
Grape Pectin Candy

Measure fruit juice or pulp into large kettle
- 1 cup grape juice
- 2 ounce package powdered pectin
- 1/2 tsp baking soda, packed level
- 1/2 tsp butter or shortening
- 1/2 cup light corn syrup
- 1 3/4 cups sugar
- 3 tbsp lemon juice
- 1/2 to 1 cup chopped nuts, optional
Roasted Asparagus with Garlic

- 1 pound fresh asparagus
- 2 tsp olive oil
- 2 cloves garlic
- Freshly ground pepper, to taste
- Salt, to taste (or omit)
- Lemon wedges, for garnish
Jamaican Rice and Peas

Place rice, coconut milk and water in a small saucepan and bring to a simmer
- 1/2 cup long-grain white rice
- 1 cup lite canned coconut milk
- 1/4 cup water
- 1 cup rinsed and drained canned pinto beans
- 2 scallions, sliced
- Salt
- Freshly ground black pepper
Pear Cake with Crumb Topping (optional)

- Cake:
- 1 3/4 cups all-purpose flour
- 1 cup granulated sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup sour cream
- 1/2 cup unsalted butter
- 1 1/2 teaspoons vanilla extract
- 2 1/2 cups coarsely chopped firm ripe pears
- Non-stick baking spray
- Crumb Topping:
- 1/2 cup all-purpose flour
- 1/2 cup packed light brown sugar
- 1 teaspoon ground cinnamon
- 1/3 cup cold unsalted butter, cut into small pieces
- 1 1/2 cups chopped walnuts

Italian Blood Orange Salad

Half fill a medium-size bowl with ice cubes
- Ice cubes
- 1 small to medium red onion, sliced into thin rings
- 3 to 4 blood oranges
- 2 Italian navel oranges
- Salt, to taste
- Freshly ground black pepper, to taste
- 15 Italian black olives
- 2 tablespoons Italian extra-virgin olive oil
Pineapple Cottage Cheese Mold

Soften gelatin in cold water and dissolve over hot water
- 1 package unflavored gelatin
- 1/4 cup cold water
- 1 pint cottage cheese
- 1 tbsp lemon juice
- 1 cup canned pineapple, drained and crushed

- 1/2 cup shortening
- 2 cups Joseph’s Grainery Whole-Grain Cookie Mix base
- 1/2 cup sugar
- 1/2 cup brown sugar, packed
- 1 egg
- 1/2 teaspoon instant coffee
- 1/4 cup molasses
- 1/4 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1/2 teaspoon lemon juice
