- 1 tsp cinnamon
- 1 tsp cloves
- 1 cup raisins
- 1 cup coarsely chopped nuts

Stuffed Red Peppers with Rice, Escarole, and Fresh Basil

- 2 red peppers, halved into boats and seeded with the insides removed
- Olive oil
- 3/4 cup extra-firm regular tofu, cut into chunks
- 1/4 cup mushrooms, finely chopped
- Pinch dried marjoram

- Pinch dried cilantro
- 2 cups cooked rice
- 2 cups fresh chopped escarole (buy a small bunch and use the leaves)
