Summer Salad

Mix vegetables in a large bowl
- Summer Salad:
- 3 cups cubed cucumber
- 2 cups cubed summer squash
- 3 cups cubed sweet peppers
- 3 cups cubed fresh tomatoes
- 2 sliced green onions
- 1 cup chopped fresh parsley
- 1 cup chopped fresh basil
- Dressing:
- 1/2 cup white wine vinegar (or any other vinegar)
- 1 tablespoon huckleberry honey
- Salt, to taste
- Pepper, to taste
Cocoa Crisps

"Low-fat cookies that can be frozen and then baked in small amounts if desired
- 2/3 cup flour
- 2 tbsp unsweetened cocoa powder
- 3/4 tsp baking powder
- Dash salt
- 1/2 cup sugar
- 3 tbsp unsalted butter
- 1 egg white
- 1 1/2 tsp light corn syrup
- 1 1/2 tsp vanilla extract
Bath Salts

3 cups of Epsom salts 1 tbsp glycerin Few drops of food coloring Perfume or essential oil
- Place Epsom salts in a bowl (do NOT use plastic). In another bowl, mix glycerin, a few drops of food coloring and enough perfume or essential oil to scent it. Mix all the ingredients together. Store the mixture in a covered plastic of glass container.
- When you are ready to use it, get in a hot shower and apply the salts to your skin to exfoliate and leave it soft and silky. You can also use the salts for a soothing bath; just add 1 - 2 cups to a tub of hot water.
Classic Corn Bread

- 2 cups sifted all-purpose flour
- 2 cups sifted corn meal
- 2 tbsp baking powder
- 1 1/2 tsp salt
- 2 tbsp sugar
- 2 eggs
- 2 cups milk
- 1/2 cup cooking oil
Claire's Sweet and Sour Meatless Stuffed Cabbage Rolls

- Stuffed Cabbage:
- Water
- 1 large head green cabbage, very outer leaves discarded, core removed
- 1 cup basmati rice
- 2 cups soy burger mixture
- 2 teaspoons Italian seasonings
- Salt, to taste
- Fresh-ground black pepper, to taste
- Sweet N' Sour Soup:
- 1 (28 ounce) can diced tomatoes in juice
- 1 (6 ounce) can tomato paste
- 4 cups water
- 3/4 cup cider vinegar or lemon juice
- 1 cup light brown sugar
- 5 sprigs fresh thyme
- 2 bay leaves
- 1 clove garlic, minced
- 1/2 tsp lemon pepper spice
Mocha Chocolate Cake with Butter Mocha Frosting

Preheat oven to 350 F. Coat two (9-inch) round cake pans with cooking spray
- Cake:
- Crisco Original No-Stick Cooking Spray
- 1 (18.25) ounce package Pillsbury's Devil's Food Cake Mix
- 1 1/4 cups strong brewed Folgers Classic Roast Coffee, cooled to room temperature
- 1/2 cup Crisco Pure Vegetable Oil
- 3 large eggs
- Butter Mocha Frosting:
- 1 (1 pound) package confectioners' sugar (about 3 3/4 cups)
- 1/4 cup unsweetened cocoa powder
- 1/4 tsp salt
- 1/4 cup butter, softened
- 1/4 cup strong brewed Folgers Classic Roast Coffee, cooled to room temperature
- 1 tsp vanilla extract
- 3 to 4 tsp milk
Hummus

Heat oil in a small skillet; saute onion until soft
- 2 tbsp safflower oil
- 1/4 cup chopped onion
- 1/2 cup minced fresh parsley
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1/2 tsp ground coriander
- 1/2 tsp dried oregano
- 1/4 tsp pepper
- Dash of ground cumin
- 3 cups cooked chickpeas
- 4 tbsp lemon juice
- 1/4 cup toasted sesame seeds

- 3 pounds sweet potatoes or yams
- 1 1/2 cups 1 percent low-fat milk
- 2 tbsp minced fresh ginger
- 3 tbsp lime juice
- 4 cups miniature marshmallows
- 2 tbsp long, thin shreds orange peel
- Salt to taste
