Tofu Vegetable Pie

I cooked this on 4/20/1990
- 2 cups chopped broccoli or cauliflower (we substituted canned green beans)
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped green pepper
- 1 1/2 cups grated Cheddar cheese
- 3/4 cup mashed tofu
- 1/2 cup water
- 1/2 cup whole wheat flour or unbleached white flour (or combo)
- 1/2 tsp baking powder
- 1/4 tsp garlic powder
- 1/4 to 1/2 tsp salt
- 1/4 tsp pepper
Cuban Black Beans

Combine all the ingredients except the rice in a large pot
- 2 quarts water
- 1 pound black beans
- 1 medium-sized onion, chopped
- 1 green pepper, sliced
- 3/4 cup olive oil
- 1 tsp oregano
- 1 bay leaf
- 2 tbsp apple cider
- 1 tsp salt
- 1/4 tsp pepper
- 1 cup brown rice, cooked (1/3 cup uncooked rice)
Mexican Lentils

- 2 2 2 cups pardina lentils
- 6 6 6 cups water
- Dash Dash of salt
- 2 2 2 dashes Cholula hot sauce
- 1 1 1 cup beer (preferably a lighter beer like Pilsner)
- 1/4 1/4 1/4 teaspoon ancho chili powder
- 2 2 2 tablespoons tomato paste
- 1 1 1 tablespoon cocoa powder (good quality, such as Barry Callebaut)
- 1 1 1 tablespoon ground cumin

The Pillsbury dry frosting mix originally used in this Bake-Off winner from 1966 hasn’t been available for years
- For cake:
- 2 ounces bittersweet chocolate, chopped
- 1/2 cup boiling water
- 3/4 cup Dutch-processed cocoa powder, plus extra for pan
- 2 cups flour
- 2 cups walnuts or pecans, finely chopped
- 2 cups powdered sugar
- 1 teaspoon salt
- 5 eggs, at room temperature
- 1 tablespoon vanilla extract
- 1 cup sugar
- 3/4 cup packed light brown sugar
- 1 1/4 cups (2 1/2 sticks) unsalted butter, at room temperature, plus extra for pan
- For glaze:
- 4 ounces bittersweet chocolate, finely chopped
- 1/2 cup heavy cream
- 2 tablespoons sugar
- 2 tablespoons water
African Peanut Stew

- 1 tbsp olive oil
- 1 medium red onion, finely chopped (about 1 1/2 cups)
- 1 medium green bell pepper, finely chopped (about 1 1/4 cups)
- 1/2 cup chopped carrot (2 small)
- 1/2 cup chopped celery (1 rib)
- 3 garlic cloves (minced)
- 2 tbsp minced, peeled fresh ginger
- 1 tbsp curry powder
- 1 (14 1/2-ounce) can diced tomatoes, drained
- 1 bay leaf
- 4 cups fat-free chicken or vegetable broth
- 1 (12-ounce) sweet potato, peeled and cut into 1/2-inch pieces
- 1 1/2 cups shelled edamame
- 1/4 cup creamy or crunchy natural peanut butter or almond butter
- 1/4 cup chopped fresh cilantro
- 1 (5-ounce) bag baby spinach leaves, torn into bite-size pieces
- 1/2 tsp salt
- Coarsely ground black pepper
Country Apple Pie

Apple pie seems like the perfect place to begin, since it was the first pie I ever made
- Filling:
- 3/4 cup sugar
- 2 tablespoons all-purpose flour
- 1 tablespoon ground cinnamon
- 1 dash ground nutmeg
- 8 medium apples, peeled, cored, and cut into 1/2-inch chunks
- 1 tablespoon salted butter
- Crust:
- 2 (9-inch) piecrusts, store-bought or your favorite crust recipe 1/4 cup heavy cream (to glaze the top crust and crimped pie edges)

Preheat oven to 400 F. Spray or lightly grease a 9-inch round cake pan
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 2/3 cup white sugar
- 1 tsp salt
- 3 tsp baking powder
- 3 cups water
- 1 egg
- 1 cup milk
- 1/3 cup vegetable oil
