Fine Sponge Cake

This is one of my Mother's (Jeannette Costigan's) recipes
- 3 3 3 eggs
- Pinch Pinch of salt
- 1 1 1 cup sugar
- 1 1 1 cup flour
- 1 1 1 tsp. baking powder
- 1/2 1/2 1/2 cup boiling water
- 1 1 1 tsp. butter
- 1 1 1 tsp. vanilla
- This is a light, fine-grained cake. Never grease pan for sponge cake. Let stand until cool, then remove from pan.
Lizzy's Crabapple Crisp

- Filling:
- 1 cup sugar
- 6 cups crabapples
- 1/4 to 1/2 cup water
- 1 1/2 teaspoons cinnamon

Walla Walla Sweet Onion Pizza

Walla Walla sweet onions are best eaten raw or only slightly cooked
- 2 tbsp olive oil, plus 1 tbsp to brush on pan
- 4 Walla Walla sweet onions, sliced
- 1 tbsp garlic, chopped
- 1 tbsp fresh thyme, chopped
- 1/2 cup tomatoes, diced
- 12 black olives, pitted and halved
- 1/2 pound frozen bread dough, thawed
Tamina Boonisar's Meatloaf

- 1 lb hamburger
- 1/4 lb pork sausage
- 1 pk onion soup mix
- 1 egg (2 eggs?)
- Dash milk (more milk?)

Apple and Honey Whole Wheat Bread

- 2 tbsp yeast
- 2 cups warm water, divided
- 1 tbsp sugar
- 1/2 cup apple butter
- 1/4 cup butter or margarine, melted
- 2 tbsp honey
- 1/2 tbsp salt
- 2 eggs beaten (optional)
- 3 1/2 cups whole-wheat flour
- 2 1/2 cups unbleached all-purpose flour
- Cornmeal
- 1 egg beaten with 1 tsp water
Creamy Leek, Potato and Mushroom Stew with Blue Cheese

The original recipe calls for chicken broth
- 1 package (1/2 ounce) dried porcini mushrooms
- 1 cup boiling water
- 1 tablespoon vegetable oil
- 2 large leeks, white part only, cleaned and thinly sliced
- 4 stalks celery, peeled and thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme leaves
- 1 teaspoon cracked black peppercorns
- 1 teaspoon salt
- 1 pound portobello or cremini mushrooms
- 1 (28-ounce) can tomatoes, including juice, coarsely chopped
- 1 cup condensed vegetable stock
- 2 to 3 potatoes, peeled and cut into 1/2-inch cubes
- 1/2 cup whipping cream
- 3 ounces good quality blue cheese, such as Maytag or gorgonzola, crumbled
Chocolate Zucchini Cake

- 3/4 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup (4 ounces) block-style fat free cream cheese, softened
- 1/3 cup vegetable oil
- 2 large eggs
- 2 large egg whites
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 3/4 cup fat free buttermilk
- 2 cups shredded zucchini
- 2/3 cup semisweet chocolate chips
- 1/4 cup chopped walnuts
- Glaze:
- 3/4 cup powdered sugar
- 3 tbsp unsweetened cocoa
- 8 tsp fat free milk
- 2 tbsp semisweet chocolate chips
- 1 tsp instant coffee granules
- 1/2 tsp vanilla extract
Stuffed Grape Leaves (Dolmades)
