Preheat oven to 350 F. Unroll softened piecrust onto a greased rimmed baking sheet

- 1/4 tsp ground cinnamon

Three-Tomato Soup

- 12 lasagna noodles, preferably whole wheat

- 1 small eggplant (3 cups), diced
- 2 cups carrots, chopped or grated
- 2 cups zucchini, chopped
- 1 cup onion, chopped
- 2 garlic cloves, minced
- 5 tbsp olive oil
- 1 tbsp oregano
- 1 tbsp basil
- 2 tsp salt
- 1 large can tomatoes (3 1/2 cups)
- 3 ounces tomato paste
- 1/2 cup sweet red wine
- 1/2 pound spinach
- 1/2 cup water
- 1 pound tofu
- 2/3 cup Parmesan cheese, grated
- 1 tsp salt
- 1 cup Mozzarella cheese, optional
Raspberry-Merlot Dressing
