- 1 cup(s) water
- 1/2 cup(s) bulgur
- 3/4 cup(s) old-fashioned oats

- 1 medium (6 to 8 ounces) onion, finely chopped
- 10 ounce(s) mushrooms, finely chopped
- 1/2 cup(s) walnuts, finely chopped

- 1 carrot, cut up

- 1/4 cup(s) packed fresh parsley

Asian-Style Fruit Slaw

Assemble the dressing by placing all ingredients in a small bowl; whisk to combine
- Dressing:
- 1/4 cup vegetable oil
- 1/4 cup seasoned rice vinegar
- 1 tbsp fresh ginger, finely minced
- 1 tbsp soy sauce
- Slaw:
- 1 medium head Napa (Chinese) cabbage, sliced thin
- 1 cup red cabbage, sliced thin
- 3 California plums or 2 California peaches or nectarines, rinsed and sliced into thin wedges
- 1/2 cup green onions, sliced diagonally
- 1/2 cup cashews, roughly chopped or broken
- 1/3 cup cilantro, chopped
- 1/4 cup candied ginger, slivered fine

- 2 1/2 pounds Granny Smith apples, peeled, cored and sliced about 1/4 -inch thick
