Applesauce Cookies or Bars

- Frosting (if desired):
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp powdered cloves
- 1/2 cup unsalted butter (or margarine)
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 1 cup applesauce
- 1 cup chopped raisins or dates
- 1/2 cup chopped nuts
- Confectioners' sugar
- Hot milk
Cheese Sticks

Preheat oven to 350 F. In a medium-size bowl, mix flour and pepper
- 1 cup whole wheat pastry flour
- 1/4 tsp pepper
- 1/4 cup butter
- 1/3 cup grated sharp Cheddar cheese (1 ounce)
- 2 tbsp grated Parmesan cheese
- 1 tbsp ice water
Carrot-Honey Casserole

Preheat oven to 350 F. Butter a 1-quart ovenproof casserole
- 4 carrots, sliced and cooked
- 1 cup milk
- 1/4 cup butter, melted
- 3 eggs, beaten
- 1/4 cup honey
- 2 tbsp whole wheat flour
- 1 tbsp baking powder
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 tbsp toasted wheat germ

Poppy Seed Cake

"Can be done with miniature loaf pans, which are about 2" x 4", for freezer storage, small families, or as gifts
- Cake:
- 1 cup (2 sticks) room temperature butter or margarine
- 1 1/2 cups granulated sugar
- 1 ounce (3 1/3 tablespoons) poppy seeds
- 1 cup buttermilk
- 4 eggs
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- (Note: Substitute 1-12.5 oz can poppy seed filling + 1 cup sour cream
- for the poppy seeds and buttermilk, if desired)
- Set aside:
- 1/2 cup sugar mixed with 1 tablespoon cinnamon
- Creamy Glaze:
- 1/3 cup butter or margarine
- 1 1/2 teaspoon vanilla
- 2 cups powdered sugar
- 2 to 4 tablespoons hot water

Mushroom and Black-Eyed Pea Ragout

A ragout (ra-GOO) is a thick stew of meats or, in this case, vegetables
- 3 tablespoons olive oil
- 1 large onion, sliced vertically
- ¼ pound shiitake mushrooms, tough part of stems removed, thickly sliced
- ¼ pound mixed mushrooms (such as cremini, baby bella and oyster mushrooms), sliced
- 4 garlic cloves, crushed
- 2 ½ cups mushroom or vegetable broth
- 1 tablespoon tomato paste
- ½ cup red wine
- 2 (15-ounce) cans black-eyed peas, drained
- ½ teaspoon salt
- Coarsely ground black pepper
- ¼ teaspoon honey
- 1 ⁄8 teaspoon Tabasco
- 1 bunch hearty greens (kale, turnip, mustard or chard) washed, thinly sliced and blanched
- Parmesan Polenta (See recipe)
- Fresh shaved Parmesan, optional
