- 2 cups sifted confectioners' sugar
- 2 tbsp warm water
- 1/2 tsp vanilla extract
- 1 tsp lemon juice

- 3/4 cup plus 1 tbsp granulated sugar

- 1/2 vanilla bean, split open and seeds scraped out, pod reserved (or 1/2 teaspoon pure vanilla extract)
- 80 to 100 toasted pecan halves (a generous cup or about 4 1/2 ounces)
- 1/2 cup light corn syrup
- 2 tbsp unsalted butter
- 1 1/2 tsp coarse sea salt
- 2 cups chopped dark chocolate (13 ounces)
- Maldon sea salt, for garnish (optional)
