Rice and Cheese Strata

Alternate layers of rice and cheese in a greased shallow 2-quart baking dish, ending with cheese on top
- 3 cups cooked rice
- 2 cups shredded sharp process American cheese
- 1 1/2 tbsp parsley flakes
- 4 eggs, slightly beaten
- 2 1/2 cups milk
- 1 tsp seasoned pepper
- 1/2 tsp salt
- 1/2 tsp dry mustard
- 1/2 tsp hot sauce
Cheesy Garlic Croutons

Preheat oven to 350 F. Melt butter in a saucepan over medium heat
- 4 ounces butter
- 1/8 tsp pure sea salt
- 1/8 tsp coarse ground pepper
- 1 tsp granulated garlic
- 1/4 cup grated Pecorino Romano cheese
- 1/2 tsp dried oregano, crushed
- 1/2 tsp dried parsley, crushed
- 1/2 tsp dried basil, crushed
- 1 baguette, cut into 1-inch cubes

Peach Shortcake

"Whole-wheat flour gives the shortcake a nutty taste
- Filling:
- 2 1/2 to 3 pounds peaches (about 6 to 8 peaches), peeled, pitted and sliced
- 1/2 cup fruit-only peach preserves
- 1 1/2 tbsp sugar (optional)
- 1/2 to 1 tbsp peach liqueur, peach schnapps or peach brandy (optional)
- 1/8 tsp almond extract
- Shortcake:
- Cooking spray
- 2 cups all-purpose flour
- 2 cups whole-wheat flour
- 1/2 cup, plus 3 tbsp sugar, divided
- 3 1/4 tsp baking powder
- 3/4 tsp baking soda
- 1/4 tsp salt
- 1/3 cup cold butter, cut into small pieces
- 4 1/2 tbsp vegetable shortening, in small pieces
- 1 cup buttermilk
- 2 eggs
- 1 1/2 tsp vanilla extract
- 1 1/2 cups whipped cream
- Fresh raspberries (optional)

Tricolor Slaw

Whisk together vinegar, lime juice, and honey in large bowl
- 3 tbsp cider vinegar
- 3 tbsp fresh lime juice
- 2 tbsp honey
- 3 tbsp olive oil
- 8 oz fresh coleslaw mix (about 3 cups)
- 2 cups shredded red cabbage
- 1 cup shredded carrot
- 1 bell pepper, sliced (optional)
- 1 tbsp poppy seeds, toasted (optional)
Dried Apricot Pie
