- 3 eggs
- 1 cup brown sugar
- 1/2 cup sugar
- 1 cup vegetable oil
- 2 tsp vanilla extract
- 2 cups lightly packed, shredded zucchini
- 2 cups unbleached flour
- 1 cup whole wheat flour
- 1 tsp cinnamon
- 1 tsp ginger
- 1/4 tsp nutmeg
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup chopped walnuts
- 1/2 cup shredded sweetened coconut

Raisin Cookies

Simmer raisins and water in saucepan 20 minutes
- 1 1/2 cups raisins
- 3/4 cup water
- 1 cup honey
- 3/4 cup oil
- 3 eggs
- 3 cups whole wheat flour
- 1/4 cup soy flour
- 1 cup wheat germ
- 1/2 cup powdered milk
- 1/2 tsp salt
- 1 tsp cinnamon
Caramel Chocolate Chunk Brioche Bread Pudding

Preheat oven to 350 F. Butter a 9-by-5-inch loaf pan
- 1 pound brioche bread, cut into 1-inch cubes
- 2 ounces butter, melted
- 1 1/3 cups heavy whipping cream
- 4 eggs
- 2 egg yolks
- 1/4 cup sugar
- 2 tsp dark rum
- 1 tsp vanilla extract
- 3 1/2 ounces dark chocolate chunks
- 3 1/2 ounces prepared caramel sauce
Three Bean Two Nut Salad

Mix all ingredients together in a large bowl and serve
- 1 (15 oz.) can red beans, drained & rinsed
- 1 (15 oz.) can white beans (garbanzo or cannelini), drained and rinsed
- 1/2 lb. fresh cooked green beans, cut into 1 inch pieces
- 2 green onions, sliced
- 1 small or half of a large red bell pepper, chopped
- 1/2 cup shredded carrots
- 2 tablespoons (about 8 pieces) sundried tomatoes, hydrated and chopped
- 1/3 cup sliced almonds, toasted
- 1/3 cup chopped walnuts, toasted
- juice of 1 lemon (1-2 tablespoons)
- 3 T. Italian style salad dressing
- 2 T. chopped fresh parsley
- salt and pepper to taste
Parmesan Peppercorn Dressing

- 4 Tbsp reduced-fat mayonnaise
- 4 Tbsp non-fat buttermilk
- 1/2 cup 2% milk
- 1 ounce Parmigiano-Reggiano (grated)
- 1/4 tsp fresh ground black pepper

- 2 cups millet or coarse ground cornmeal or cracked wheat
- 6 cups water
- 1/3 cup oil
- 1/4 cup tamari sauce
- 1 tsp kelp
- 1/2 tsp cayenne pepper
- 2 cups chopped vegetables (potato, green pepper, onions, celery, carrots, etc)
- 1/4 cup smoked yeast, optional
