Beat together butter, cheese and honey; add egg yolk, vanilla and rind
- 1/2 cup butter
- 1 cup (8 ounces) cream cheese, softened
- 3/4 cup honey
- 1 egg yolk
- 1 tsp vanilla
- 1 tsp grated orange rind
- 2 3/4 cups whole wheat pastry flour
- 1/4 cup soy flour
- 1/2 tsp salt
Peppers Stuffed with Tofu and Rice

In a large skillet, heat 2 tbsp oil
- 3 tbsp safflower or olive oil
- 1 medium-size onion, chopped
- 2 cloves garlic, minced
- 1 stalk celery, chopped

- 1 pound drained firm tofu, mashed
- 1 2/3 cups (15 ounce can) tomato sauce
- 1 1/2 cups cooked brown rice

- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/2 tsp pepper
- 2 eggs, beaten
- 6 large green peppers
- 1/4 cup wheat germ
- 1/4 cup grated Parmesan cheese (1 ounce)
- 3/4 to 1 cup boiling water
