Harvest Apple Slaw

Combine mayonnaise, vinegar and sugar in a bowl and mix with a wooden spoon; set aside
- 2 cups mayonnaise
- 1/2 cup rice vinegar
- 1/2 cup sugar
- 1 head cabbage,chopped
- 1 Gala or Fuji apple, chopped
- 1 Granny Smith apple, chopped
- 1 Bartlett or Anjou pear, chopped
- 1 tablespoon butter
- 1 tablespoon olive oil
- 4 large or 8 small garlic cloves, finely chopped
- 3/4 tsp seasoned salt
- 1 cup pine nuts
- 1 cup unsweetened dried cranberries*
- Note: Do NOT use sweetened dried cranberries, which have a red dye that will color the dressing
Pear and Ginger Crisp

Heat oven to 400 F. Arrange the pears in a shallow 1 1/2-quart baking dish; sprinkle with the crystallized ginger
- Topping:
- 2 cans (16 ounces each) sliced pears or pear halves in heavy syrup, drained
- 1 tbsp crystallized ginger, minced
- 2/3 cup old-fashioned oatmeal
- 1/4 cup all-purpose flour
- 1/3 cup light brown sugar, packed
- 1/2 tsp ground ginger
