Lemon Zucchini Cookies

In large bowl, cream margarine and sugar until light and fluffy
- 3/4 cup (175 ml) margarine or butter
- 3/4 cup (175 ml) sugar
- 1 large egg
- 2 tsp (10 ml) lemon rind
- 1 tsp (5 ml) lemon juice
- 2 cups (500 ml) all-purpose flour
- 1 tsp (5 ml) baking powder
- 1/2 tsp (2 ml) salt
- 2 cups grated zucchini
- 1 cup (250 ml) coconut
- 1/2 cup (125 ml) chopped walnuts
- 1/2 cup (125 ml) raisins
Raspberry Vinaigrette

- Herbs de Provence:
- 1/2 cup Dijon mustard
- 1/2 cup raspberry or tarragon vinegar
- 2 tbsp dried herbs de Provence
- 1 tbsp pepper
- 1 cup safflower oil
- 24 raspberries
- Tarragon
- Chervil
- Thyme
Roasted Parsnips

- 4 to 5 medium parsnips, peeled and cut into large sticks (about 2 1/2 cups)
