Spray two 8-by-4-by-2-inch baking pans with nonstick coating; set aside

Summer Vegetables in Parchment Paper

The best summer vegetables all wrapped up in a parchment paper heart
- 2 medium zucchini, sliced into 1/4-inch rounds
- 2 summer squash, sliced into 1/4-inch rounds
- 3 medium plum tomatoes, cut into 1-inch chunks
- 1/2 onion, thinly sliced
- 1 tablespoon chopped fresh basil
- 1/2 teaspoon fresh oregano
- 1/2 cup crumbled feta cheese
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Raisin-Oat Orange Muffins

- Topping:
- Nonstick cooking spray
- 3/4 cup whole wheat flour
- 3/4 cup all-purpose flour
- 1 cup uncooked oats (quick or old fashioned)
- 2 1/2 teaspoons baking powder
- 1/2 cup granulated sugar
- 1 tablespoon finely grated orange rind
- 1 large egg, slightly beaten
- 1 cup (8 ounces) light sour cream
- 2 tablespoons vegetable oil
- 3/4 cup orange juice
- 3/4 cup golden raisins
- 1/4 cup uncooked oats (quick or old fashioned)
- 3 tablespoons brown sugar
- 1 tablespoon finely grated grated orange rind
- 1 tablespoon butter, melted
Chickpea Salad Sandwich

It goes without saying that I am a big fan of chickpeas
- Salad:
- 1/2 cup cooked chickpea, mashed with a fork
- 1/4-1/2 " slice of cucumber, diced
- 1 small carrot or 3 baby carrots, thinly sliced
- 1 heaping tbsp vegan mayo (we use Organic Vegenaise)
- Sandwich:
- 4 pieces of gluten-free vegan bread, toasted (we used Ener-G Brown Rice Bread)
- 2 thinly sliced pieces of tomato
- 2 pieces of Romaine lettuce
- 8 pickle slices (we use Bubbie's Bread and Butter Pickles)
- Extra mayo for spreading on toast
Steamed Cranberry Pudding

Generously butter the inside of a decorative 2-quart steamed pudding mold, including the lid
- 1/4 cup unsalted butter, at room temperature (plus extra for greasing)
- 3 tbsp granulated sugar, plus extra for dusting
- 1 1/2 cups coarsely chopped fresh cranberries
- 1 1/2 cups unbleached all-purpose flour
- 1 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup firmly packed golden brown sugar
- 1/4 cup unsulfured light molasses
- 2 tsp minced orange zest
- 1/3 cup buttermilk
- Boiling water, as needed
- Vanilla ice cream
Cappucino Cheesecake

Preheat oven to 350 F (or 325 F for a dark-colored nonstick springform pan)
- Crust:
- 1 cup chocolate cookie crumbs (like chocolate Teddy Grahams), almost 3 ounces
- 2 tbsp sugar
- 2 tbsp lowfat margarine or whipped butter, melted
- Filling:
- 2 tbsp instant coffee
- 3 tbsp Kahlua or other coffee-flavored liqueur
- 5 packages (8 ounces each) light cream cheese
- 2/3 cup granulated sugar
- 1/3 cup Splenda
- 3 tbsp white flour
- 1 tbsp vanilla extract
- 2 eggs
- 2 egg whites or 1/4 cup egg substitute
- 1 cup fat free sour cream
US Naval Academy Cannon Balls

[The Hard Sauce recipe isn't clear and there are a lot of inside jokes
- Six (6) apples, cored and peeled
- One -half (1/2) pound of granular sugar
- Cinnamon sugar (Ground Cinnamon and granular sugar mixed, to taste)
- One quarter (1/4) pound of butter (recall the Academy only served us butter)
- Pie Dough - Six (6) Ounces, or of sufficient quantity
Leek and Red Pepper Frittata

- 2 tsp olive oil
- 1 leek (white and green parts), washed, halved lengthwise, and sliced into thin half-moons
- 1/2 medium red bell pepper, diced
- 3 large eggs
- 1/2 cup part-skim ricotta cheese
- 1/4 tsp kosher salt
- Freshly ground black pepper to taste
Boozy Strawberry-Orange Milkshakes
