  • 2 cups flaked coconut
  • 1 1/2 cups chopped pecans
  • 2 teaspoons vanilla extract
  • {Drizzle}
  • 1/2 teaspoon shortening
  • 2 semisweet chocolate squares (2 ounces)

  • 1 c Vegetable Oil
  • 2 t Vanilla Extract
  • 1 T Finely Grated Fresh Orange Zest
  • 3 Eggs, extra large
  • Pam non stick Cooking Spray
  • Cream Cheese Icing
  • 2 sticks Butter, unsalted, softened
  • 16 oz. Cream Cheese, softened (2 bars)
  • 3 c Powdered Sugar
  • 4 t Vanilla Extract
  • 1/4 t Almond Extract
  • 1 small pinch Salt (very small pinch)

  • 1/2 teaspoon espresso powder, optional
  • 1/2 cup heavy cream
  • 1/2 cup (8 tablespoons) butter, preferably at room temperature for easiest mixing

  • 1 cup confectioners' sugar, sifted
  • 1 teaspoon vanilla extract
