German Chocolate Drizzle Cake

1.Preheat oven to 350 degrees F (175 degrees C)
- {Cake}
- 1/2 cup water
- 6 (1 ounce) squares German sweet chocolate {I use “Bakers” German semi-sweet chocolate bar}
- 1 cup butter, softened
- 2 cups white sugar
- 4 egg yolks
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 2 1/2 cups cake flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 4 egg whites
- {Frosting}
- 1 1/2 cups white sugar
- 1 1/2 cups evaporated milk
- 3/4 cup butter
- 4 egg yolks, beaten
- 2 cups flaked coconut
- 1 1/2 cups chopped pecans
- 2 teaspoons vanilla extract
- {Drizzle}
- 1/2 teaspoon shortening
- 2 semisweet chocolate squares (2 ounces)
Caramel Apple and Pear Crisp

Heat oven to 375°F. Spray 8-inch square (2-quart) baking dish with nonstick cooking spray
- Fruit Mixture:
- 2 medium apples, peeled, sliced (2 1/2 cups)
- 2 medium pears, peeled, sliced (2 1/2 cups)
- 2 tablespoons sugar
- 1/4 teaspoon allspice
- 1/3 cup caramel ice cream topping
- Topping:
- 1/2 cup firmly packed brown sugar
- 1/2 cup quick-cooking rolled oats
- 1/2 cup chopped walnuts
- 1/4 cup all-purpose flour
- 1/4 cup butter
- Garnish:
- Whipped cream
- Caramel ice cream topping
Carrot Cake with Cream Cheese Frosting

Preheat oven to 350 degrees
- 2 c All Purpose Flour
- 1 1/2 c Sugar
- 1/4 c Brown Sugar, packed (dark or light)
- 1 1/2 t Baking Soda
- 1 t Baking Powder
- 1 t Salt
- 4 t Cinnamon
- 1/4 t Nutmeg
- 1/8 t Ground Cloves
- 1/4 t Ground Ginger
- 2 c Finely Grated Peeled Carrot, packed
- 1 c Coconut Flakes, sweetened
- 1 c Raisins (Optional)
- 1 can 8 oz Crushed Pineapple, drained
- (reserve 1 T of drained Pineapple juice)
- 1 1/2 c Walnuts or Pecans, chopped small pieces
- 1 c Vegetable Oil
- 2 t Vanilla Extract
- 1 T Finely Grated Fresh Orange Zest
- 3 Eggs, extra large
- Pam non stick Cooking Spray
- Cream Cheese Icing
- 2 sticks Butter, unsalted, softened
- 16 oz. Cream Cheese, softened (2 bars)
- 3 c Powdered Sugar
- 4 t Vanilla Extract
- 1/4 t Almond Extract
- 1 small pinch Salt (very small pinch)
Chocolate Cannoli Cake

1) To make the cake: Preheat the oven to 325°F
- Cake:
- 1/2 cup (8 tablespoons) butter, preferably at room temperature for easiest mixing
- 1 1/2 cups sugar
- 3/4 teaspoon salt
- 2 teaspoons vanilla extract
- 1/4 teaspoon baking powder
- 1 tablespoon espresso powder, optional, to enhance chocolate flavor
- 2/3 cup Double-Dutch Dark Cocoa or Dutch-process cocoa powder
- 3 large eggs
- 1 1/4 cups King Arthur Unbleached All-Purpose Flour
- 3/4 cup milk
- Filling:
- 2 cups ricotta cheese, part-skim preferred
- 1/3 cup confectioners' sugar
- 1 teaspoon vanilla extract
- 3/4 cup semisweet chocolate chips, mini chocolate chips preferred
- 2 tablespoons simple syrup or vanilla syrup, to brush on cake, optional
- Frosting:
- 1 cup unsweetened baking cocoa
- 3/4 cup confectioners' sugar
- 1/2 teaspoon espresso powder, optional
- 1/2 cup heavy cream
- 1/2 cup (8 tablespoons) butter, preferably at room temperature for easiest mixing
- pinch of salt
- 1 cup confectioners' sugar, sifted
- 1 teaspoon vanilla extract
Lemon-Blueberry Cheesecake Bars

- 9 graham cracker rectangles
- 2 tablespoons granulated sugar
- 1 teaspoon grated lemon peel
- 1/4 cup butter, melted
- Filling:
- 2 packages (8 oz each) cream cheese, softened
- 2 eggs
- 2 tablespoons grated lemon peel
- 1/4 cup fresh lemon juice
- 1/2 cup granulated sugar
- 1 1/2 cups fresh blueberries or Cascadian Farm® organic frozen blueberries (thawed) (from 8-oz bag)
- Streusel Topping:
- 1 cup packed brown sugar
- 3/4 cup Gold Medal™ all-purpose flour

- 1/3 c cocoa
- 1 c water (divided)
- 1/4 tsp salt
- 1/4 c butter
- 1/2 c canned milk
- 1 +1/2 c white sugar
- 1 tsp vanilla
- 4 T corn starch
