Oven-Poached Salmon Fillets

Preheat oven to 425°F. Coat a 9-inch glass pie pan or an 8-inch glass baking dish with cooking spray
- 1 pound salmon fillet, cut into 4 portions, skin removed, if desired
- 2 tablespoons dry white wine
- 1/4 teaspoon salt
- Freshly ground pepper, to taste
- 2 tablespoons finely chopped shallot, (1 medium)
- Lemon wedges, for garnish
Easy Tomato Soup & Grilled Cheese Croutons

In a large pot or Dutch oven such as Le Creuset, heat the olive oil over medium heat
- 3 tablespoons good olive oil
- 3 cups yellow onions, chopped (2 onions)
- 1 tablespoon minced garlic (3 cloves)
- 4 cups chicken stock, preferably homemade
- 1 (28-ounce) can crushed tomatoes, preferably San Marzano
- Large pinch of saffron threads
- Kosher salt and freshly ground black pepper
- 1/2 cup orzo
- 1/2 cup heavy cream
- Grilled Cheese Croutons (see below)

- 2 tablespoons butter
- 1 onion, cut into thin slices
- 1 1/2 teaspoons dried sage
- 1 pound sweet potatoes, peeled and cut into 1/2-inch cubes
- 1 1/2 quarts canned low-sodium chicken broth or homemade stock
- 2 teaspoons salt
- 1/4 pound green beans, cut into 1/4-inch pieces

Lemon Walnut Chicken

In a small bowl, mix together the parsley, walnuts and lemon zest
- 2 tablespoons very finely chopped parsley*
- 2 tablespoons very finely chopped toasted walnuts*
- 1/4 teaspoon finely grated lemon zest
- 4 medium skinless, boneless chicken breast halves, pounded to 1/2-inch thickness
- 2 teaspoons all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon extra-virgin olive oil
- 3 tablespoons diced shallots
- 1/4 cup low-sodium chicken broth

- 3 garlic cloves, minced
- 3 tbsp olive oil
- 29 oz tomato puree
- 28 oz crushed tomatoes
- 2 tbsp brown sugar
- 1 tbsp Italian seasoning
- 1 tsp dried basil
- 1/2 tsp salt
- 1/2 tsp crushed red pepper flakes
