Salad on a Stick

- 1/2 head iceberg lettuce, cut into small chunks
- 12 cherry tomatoes
- 8 ounces mild Cheddar, cut into cubes
- 1/2 English cucumber, cut into chunks
- 1/4 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Italian seasoning
- Kosher salt and freshly ground black pepper
Orecchiette with Shrimp, Pancetta and Fresno Chiles

Bring a large pot of salted water to a boil
- Kosher salt
- 1 pound orecchiette
- 2 tablespoons butter
- 8 ounces pancetta, cut into medium dice
- 1 tablespoon extra-virgin olive oil, plus more for drizzling
- 2 cloves garlic, thinly sliced
- 1 /2 teaspoon red pepper flakes
- 8 ounces large shrimp, peeled and deveined, tails removed, sliced lengthwise
- 2 small Fresno chile peppers, seeded and sliced into very thin rings
- Zest of 1 lemon
- 1 /2 cup freshly grated Pecorino Romano
- 1 /2 cup roughly chopped fresh basil
Bacon and Hash Brown Egg Bake

1 In 12-inch skillet, cook bacon until crisp
- 1 lb bacon, cut into 1-inch pieces
- 1 medium onion, chopped (1/2 cup)
- 1 medium red bell pepper, chopped (3/4 cup)
- 1 package (8 oz) sliced fresh mushrooms
- 2 tablespoons Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3/4 cup milk
- 12 eggs
- 1 package (2 lb) frozen hash browns, thawed
- 2 cups shredded Cheddar cheese (16 oz)

- tulle {I found some 9″ round tulle circles at the dollar store which worked perfectly!}

- One 17.3-ounce package puff pastry, thawed
- 3 tablespoons basil pesto
- 4 Roma tomatoes sliced

Marinated Beef Tenderloin Skewers with Mustard Horseradish Cream

For the tenderloin skewers: Cube the meat into 2-inch pieces and skewer with rosemary sprigs
- 2 pounds filet mignon steaks, about 1 1/2-inches thick
- Thirty 3-inch rosemary stems, leaves removed from bottom ends
- 1/4 cup olive oil
- 1 tablespoon packed light brown sugar
- 1 tablespoon Worcestershire sauce 1 tablespoon packed light brown sugar
- 2 teaspoons mustard powder
- 2 teaspoons ground cumin
- 1 teaspoon coarse salt
- 1/2 teaspoon ground black pepper
- 5 cloves garlic, smashed and chopped 1/4 cup olive oil
- 2 small limes, juiced
- 1 cup sour cream
- 1/3 cup prepared horseradish
- 2 tablespoons spicy mustard
- 1/4 teaspoon salt
- Pinch ground black pepper
FRUIT CRISP

Apricot and Raspberry Granola Gratin with Raspberry Honey Yogurt

For the yogurt: In a small bowl, mix the yogurt and honey together
- 1 cup nonfat Greek yogurt
- 3 tablespoons raspberry honey
- 1 cup whole milk
- 4 eggs
- 1 cup all-purpose flour
- 4 tablespoons unsalted butter, melted, plus a few tablespoons softened butter for greasing
- 2 tablespoons light brown sugar
- 2 tablespoons pure cane sugar
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon fine sea salt
- 8 ripe, slightly firm fresh apricots, halved, pitted and quartered
- 1 cup fresh raspberries
- 1 cup low fat granola, such as Kellogg's
- 1/2 cup sliced almonds
Banana-Berry Frozen Yogurt Bars

- 10-1/2 HONEY MAID Honey Grahams, broken into quarters (42 rectangles)
- 1/2 cup sliced fresh strawberries
- 1/2 cup chopped bananas
- 1/4 cup blueberries
- 1 cup vanilla nonfat Greek-style yogurt
- 1 cup thawed frozen reduced-fat whipped topping
Pan-Fried Honey-Lemon Fingerling Potatoes and Leeks

- Freshly cracked black pepper

- 1 tablespoon minced fresh Italian parsley
- 1 lemon, zested
