Roasted Eggplant Spread

- 1 red bell pepper, seeded
- 1 red onion, peeled
- 2 garlic cloves, minced

- 1/2 teaspoon cayenne pepper

- 2 tablespoons tahini
- 3 tablespoons chopped parsley, plus extra for garnish
Mini Meatball Pasta Bake

For the layering: Meanwhile, bring a large pot of water to a boil

- 1/4 cup chopped fresh basil
- 1 pound ziti or mostaccioli pasta
- 16 ounces fresh mozzarella, cut into cubes

Tomato, Bacon and Gruyere Tart

- 1 sheet of puff pastry (from a 17.3 oz box), thawed
- 1 1/2 cups shredded gruyere cheese
- 4 slices cooked bacon, crumbled
- 3 thinly sliced small tomatoes
- 2 teaspoons fresh thyme leaves
- 1/2 teaspoon kosher salt
- freshly ground pepper
- 1 egg
Sugar Coated Peanuts

Dissolve sugar and water in sauce pan over medium heat add cinnamon and peanuts and stir until completely coated

- 1/2 t cinnamon

Nacho Cheese Casserole

For the sauce: In a saucepan over medium heat, combine the vegetable oil and flour
- Sauce:
- 3 tablespoons vegetable oil
- 3 tablespoons all-purpose flour
- One 28-ounce can enchilada sauce
- One 10-ounce can enchilada sauce
- 3 cups chicken broth
- 1 /2 teaspoon ground cumin
- Kosher salt and freshly ground black pepper
- Meat:
- 3 pounds ground beef
- 2 cloves garlic, minced
- 1 medium onion, finely chopped
- 1 /2 teaspoon kosher salt
- Casserole:
- Nonstick cooking spray, for the baking dishes
- One 15-ounce bag nacho cheese-flavored chips, such as Doritos
- 2 cups shredded pepper jack cheese
- 2 cups shredded Cheddar cheese
- Toppings: (see Cook's Note)
- 1 1/2 cups shredded romaine
- 3 Roma tomatoes, diced
- 1 /2 cup sour cream
- 1 /4 cup sliced black olives
- 3 green onions, sliced
Crazy Bark

Melt the almond bark in a double boiler (I use a glass bowl over a saucepan of simmering water)
- One 20-ounce package white almond bark
- 16 whole chocolate graham crackers
- 1 cup pretzel sticks
- 1 cup broken chocolate sandwich cookies, such as Oreos
- 1 cup gummy bears
- 1 cup gummy worms
- 1 cup sour gummy worms
- 1 cup roasted salted peanuts
- 1 cup chocolate candies, such as M and Ms
- 2 tablespoons rainbow sprinkles
Argentina Rocket Salad with Fried Egg, Grilled Chorizo and Grilled Provoleto Crostini

Two hours before grilling, remove the provolone cheese from the refrigerator and let sit at room temperature
- One 2-inch thick round of young provolone
- 1 pound link chorizo
- Canola oil, for brushing
- Kosher salt and freshly ground black pepper
- 1 tablespoon chopped fresh oregano
- 1/2 teaspoon crushed red pepper flakes
- 4 slices Italian or French bread, cut 1/2-inch thick on a sharp diagonal
- 1/2 cup extra-virgin olive oil, plus more for drizzling
- 2 tablespoons unsalted butter
- 4 large eggs
- 3 tablespoons aged sherry vinegar
- 2 teaspoons Dijon mustard
- 1 teaspoon clover honey, optional
- 4 ounces rocket ( arugula)
- 3 ripe plum tomatoes, cored and quartered

Pig Pickin Cake

For the cake: Preheat the oven to 350 degrees F
- Topping:
- Nonstick baking spray, for the pan
- One 18.25-ounce box yellow cake mix
- 8 tablespoons (1 stick) salted butter, softened
- 1 teaspoon vanilla extract
- 4 large eggs
- One 23.5-ounce jar mandarin oranges, drained and 1/2 cup juice reserved
- 4 ounces cream cheese, softened
- 1/2 cup confectioners' sugar
- 1 1/2 cups chilled heavy cream
- 2 teaspoons vanilla extract
- One 20-ounce can crushed pineapple, drained
Cheese Bombs

For the dough and egg wash: Preheat the oven to 400 degrees F
- Three 4.5-ounce cans refrigerated biscuits (6 biscuits per container)
- All-purpose flour, for flouring the work surface
- 1 large egg whisked with 2 tablespoons milk
- 18 fresh basil leaves
- 8 sundried tomatoes, finely chopped
- 18 balls mozzarella (1-inch balls)
- 1 tablespoon garlic powder
- 1/2 cup crumbled cooked bacon
- 1/2 cup caramelized onions
- 18 cubes Cheddar (1-inch cubes)
- 1 cup cooked favorite taco meat
- 1/2 cup diced pickled jalapenos
- 18 cubes processed cheese food, such as Velveeta (1-inch cubes)
Mexican "Fried" Ice Cream

Crush cornflakes and then add remaining ingredients
- 1 pint vanilla ice cream, softened in microwave on defrost 30 seconds
- 3 cups Corn Flakes
- 1 teaspoons ground cinnamon
- 1 tablespoon melted butter
- 1/2 cup brown sugar
- Honey, for drizzling
