Bacon-Wrapped Shrimp

- Juice of 1 lemon
- 1 clove garlic, grated
- 1 teaspoon paprika
- 1 teaspoon fresh thyme
- 3 tablespoons extra-virgin olive oil
- Kosher salt
- 1 pound (about 24) large shrimp, peeled and deveined, tails intact
- 12 slices bacon, halved
Tomatoes Roasted with Pesto

Preheat the oven to 425 degrees
- 2 to 2 1/2 pounds large red tomatoes
- 3 tablespoons good olive oil
- 2 teaspoons dried oregano
- Kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup pesto, store-bought or homemade (recipe follows)
- 1/2 cup freshly grated Parmesan cheese
Ham-and-Cheese Croissant Casserole

Cut croissants in half lengthwise, and cut each half into 4 to 5 pieces
- 3 (5-inch) large croissants
- 1 (8-oz.) package chopped cooked ham
- 1 (5-oz.) package shredded Swiss cheese
- 6 large eggs
- 1 cup half-and-half
- 1 tablespoon dry mustard
- 2 tablespoons honey
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon ground nutmeg (optional)

- 1 (18.25 ounce) package butter cake mix
- 1 cup sour cream
- 3/4 cup vegetable oil
