Cream Cheese Crab Spread with Homemade Crostini

Combine the cream cheese and all but 1/2 cup of the crabmeat in a medium bowl
- 8 ounces Neufchatel cheese or cream cheese, softened
- 1 pound fresh crabmeat, picked over for shells
- 4 tablespoons ketchup
- 4 tablespoons prepared horseradish
- Juice of 1/2 lemon
- 1 teaspoon kosher salt
- Freshly ground black pepper
- 2 tablespoons chopped fresh chives
- 1 clove garlic
- 1 baguette, sliced into 18 rounds and toasted
Spiked Jellied Cranberry Sauce

Put the gelatin in a small bowl, and pour the vodka and liqueur over it
- 1 tablespoon unflavored gelatin
- 1/3 cup vodka
- 2 tablespoons orange-flavored liqueur, such as Cointreau
- One 14-ounce can jellied cranberry sauce

Potato Pancakes

Put the onions through a food processor fitted with the grater attachment
- Yield: about 16 pancakes
- 1 small yellow onion, quartered
- 4 medium russet potatoes (about 1 pound), scrubbed and quartered
- 1 large egg, lightly beaten
- 4 to 6 tablespoons all-purpose flour
- Kosher salt and freshly ground black pepper
- Vegetable oil, for frying

Monkey Waffle Pudding

- 1 tablespoon salted butter
- 9 to 12 frozen waffles, thawed and cut into quarters

- 1/4 cup light or dark brown sugar
- 2 ripe bananas, mashed

- 1 cup balsamic vinegar
- 1 clove garlic, smashed
- 1 sprig fresh rosemary
- 3 large red bell peppers, grilled, peeled, seeded and diced
- 2 tablespoons honey
- 2 tablespoons prepared horseradish
- 1 tablespoon molasses
- 1 tablespoon red wine vinegar
- 2 teaspoons Worcestershire sauce
- 1 teaspoon kosher salt
- 1/2 teaspoon coarsely ground black pepper
Porcini Ancho Dusted Prime Rib roast, with Red Wine, and Mushroom Reduction

Season prime rib roast liberally with salt and pepper all over
- 1 approx 3 lb. Kansas City Steaks Prime Rib Roast
- salt and pepper to taste
- 3 oz. dried porcinis
- 1/4 cup ancho chile powder
- 1 tbsp. garlic powder
- 1/2 tbsp. onion powder
- 1/2 tbsp. paprika
- 1 cup red wine
- 1 cup sliced mushrooms
- 6-8 tbsp. butter, cold
- 1/2 cup reserved liquid from roast
Cornbread Chicken Casserole

Crust Mix all together in mixing bowl until smooth
- Crust
- 1 cup yellow cornmeal
- 1/3 cup flour
- 1 and 1/2 teaspoon baking powder
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 tablespoon vegetable oil
- 3/4 cup buttermilk
- 1 egg
- Chicken Filling
- 2 and 1/2 cups cooked chicken breast (cut into bite-size pieces)
- 1/4 cup yellow onion, chopped
- 1/2 cup celery, sliced thin
- 1 teaspoon salt
- 1/2 of a small can of green peas
- 1/2 small can of chopped carrots
- 1/4 teaspoon fresh ground pepper
- 1 can cream of chicken soup
- 1 and 3/4 cups chicken broth

- 1 tablespoon all-purpose flour, plus more for dusting
- 1 sheet frozen puff pastry, thawed (a 9 1/2- by 9-inch sheet from a 17.3-ounce package)
