BBQ Chicken Skewers

Combine sugar, paprika, cumin, cayenne, and salt in large bowl
- 3 TBS brown sugar
- 1 TBS paprika
- 1/2 tsp ground cumin
- 1/2 tsp cayenne pepper

- 4 boneless, skinless chicken breasts, trimmed and cut into 1 inch chunks
- 1 1/4 C BBQ sauce
- 1/4 C cider vinegar
- 1/2 C sour cream
- 2 TBS minced fresh cilantro
Buffalo Chicken Casserole

- 1 large spagetti squash, cooked and shredded
- 1 large onion, diced
- 1 cup diced carrots, about 2-3 medium size
- 2 pounds cooked chicken
- 1 cup hot sauce (like Frank's Red Hot)
- 1/4 cup ranch dressing
- 1 teaspoon garlic powder
- 1/4 teaspoon pepper
- salt to taste (about 1/4 teaspoon)
- 3 eggs
Spicy Pimiento Cheese

Place the cream cheese in a medium bowl and stir until softened
- 1/2 cup cream cheese
- 1/2 cup mayonnaise
- 1 jar American Spoon Chili Jam
- 14 ounces extra sharp cheddar cheese, grated
- 3 tablespoons minced chives
- Salt and pepper to taste
