Almost Flourless Chocolate Cake with Meyer Lemon Whipped Cream

serve with or without cream
- 7 sounces best-quality dark chocolate
- 7 ounces unsalted Europen-style butter, cut into 1/2 inch cubes
- 1 1/3 cup granulated sugar
- 5 large eggs
- 1 Tbs. all purpose flour
- 1 pint heavy whipping cream
- Peels from one Meyer lemon
Homemade pizza/calzone dough

Combine water, sugar and yeast in small bowl
- 1 1/2 c. warm water
- 2 T. sugar
- 2 1/4 t. active dry yeast (one 1/4 oz. packet)
- 3 3/4 c. flour
- 1 T. Kosher salt
- 3 T. extra virgin olive oil
Five Minute Spicy Asian Chicken Salad

Simply put all ingredients into a large plastic bag and shake vigorously until well incorporated
- 2 bags shredded carrots
- 2 bags of ”Cruciferous Crunch” shredded salad from Trader Joe’s (alternately you could use slaw mix + shredded kale)
- 2 Tbs black sesame seeds
- 1 jalapeno sliced very fine into halves (more or less according to taste, I like it SPICY!)
- 1 rotisserie chicken, torn into shreds
- juice of 2 limes
- 4 Tbs Tamari (tamari is a gluten free soy sauce) or regular soy sauce
- 1 Tbs Siracha
- 5-6 drops liquid stevia (alternately you could use a drizzle of honey or maple syrup but I like to keep it sugar free)
Asparagus and Mushroom Salad

- 5 oz asparagus
- 1 tsp yellow mustard
- 2 TBS lemon juice
- 1/4 C honey
- 2 cloves garlic, crushed
- Pepper to taste
- 13 oz. mushrooms
- 5 oz arugula
- 1/2 C red bell pepper, chopped

- ½ c hot sauce such as Frank’s
- ½ c butter
- 1 tbsp white vinegar
- ¼ tso Worcestershire sauce
- ¼ tsp cayenne pepper
- 1 clove garlic crushed
- ¼ tsp salt
- 2 tbsp cream cheese
- 1 lb cooked chicken shredded
- 1 bunch celery cut into 2-3 inch long pieces
- Ranch (optional)
- Green onions (optional)
Grilled Cheese with Cauliflower Bread

Brush bread with olive oil and broil or fry
- For the bread:
- 1 14-ounce 1 14-ounce 14-ounce bag cauliflower rice, steamed until tender
- 1 1 1 lightly beaten egg
- 1/2 1/2 1/2 cup shredded parmesan cheese
- 1/2 1/2 1/2 tsp garlic powder
- 1/2 1/2 1/2 tsp black pepper
- For the sandwiches:
- 4 4 4 slices cauliflower bread
- 2 2 2 thick slices southern European cow, goat, or sheep’s milk cheese, such as gruyere, manchego, buffalo mozzarella, or goat’s milk cheddar

Preheat oven to 350. Coat 3 8 inch round pans (I used 9" and baked for 20 minutes) with nonstick spray
- 1 1/2 cups vegetable oil
- 2 eggs
- 1 C buttermilk
- 1 TBS vinegar
- 1 tsp vanilla
- 2 C granulated sugar
- 1 TBS unsweetened cocoa powder
- 1 tsp salt
- 1 tsp baking soda
- 2 1/2 C all pupose flour
- 1 oz red food coloring
Meyer Lemon Chicken Piccata

- 2 (8-ounce) skinless, boneless chicken breast halves
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup all-purpose flour
- 2 tablespoons unsalted butter, divided
- 1/3 cup sauvignon blanc or other crisp, tart white wine
- 1/2 cup fat-free, lower-sodium chicken broth
- 1/3 cup fresh Meyer lemon juice (about 3 lemons)
- 2 tablespoons capers, rinsed and drained
- 1/4 cup chopped fresh flat-leaf parsley

- 1-2 drops of lemon juice
