Grilled Scallops with Chili-Lime Cream Sauce

Combine scallops, olive oil, salt and pepper to taste, red pepper flakes and garlic
- 1 1/2 lb large sea scallops
- 1/4 cup olive oil
- Salt and pepper
- 1/4 tsp red pepper flakes
- 2 garlic cloves, finely chopped
- Cooked jasmine or white rice
- Chili-lime cream sauce
- 1/4 cup freshly squeezed lime juice
- 1/4 cup white wine
- 1/ tbs minced peeled fresh ginger
- 1 large shallot, chopped
- 1/3 cup heavy cream
- 1 Tbs Asian sweet chilie sauce
- 6 Tbs unsalted butter
- Salt and pepper
Chicken Sopia

Combine ingredients through chicken and heat in a saucepan
- 2 cans cream of chicken soup
- 1-2 Tbs chili powder
- 1 small can evaporated milk
- 3-4 jalapenos chipped
- Dried or fresh onion
- 2-3 chicken breasts, cooked or left over chicken or turkey
- 1 package of tortillas
- 2 cups grated cheddar cheese
Slow Cooker Tortilla Soup

Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker
- 1 pound shredded, cooked chicken
- 1 (15 ounce) can whole peeled tomatoes, mashed
- 1 (10 ounce) can enchilada sauce
- 1 medium onion, chopped
- 1 (4 ounce) can chopped green chile peppers
- 2 cloves garlic, minced
- 2 cups water
- 1 (14.5 ounce) can chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bay leaf
- 1 (10 ounce) package frozen corn
- 1 tablespoon chopped cilantro
- 7 corn tortillas
- vegetable oil

Sweet and Sticky Chicken

- 10 tbsp.unsalted butter, plus more for pan
- 1 cup cocoa powder
- 3 1/4 cups sugar

Spicy Asian Chicken Salad

Combine all the chopped vegetables (leaving out the scallions) in a large bowl
- 1 whole roasted chicken (Shredded)
- Note: I usually buy organic from the store or roast a couple on Sunday as part of meal prep for the week
- 1 red pepper (sliced)
- 1 yellow pepper (sliced)
- 1 cup snow peas (sliced)
- 1 cup carrots (sliced)
- 3 scallions (sliced)
- 1 clove garlic (minced)
- 1 tablespoon rice vinegar
- 3 teaspoons Sriracha
- 1 teaspoon chili flakes
- 1/3 cup lime juice
- 1/3 cup soy sauce or fish sauce
- 4 tablespoons sesame oil
- salt (optional to taste)
