For the frittata: Preheat the oven to 325 degrees F
- Frittata:
- 4 tablespoons extra-virgin olive oil
- 1 cup chopped onion
- 1 pound hot Italian sausage, casings removed
- 1 tablespoon chopped garlic
- 1 tablespoon chopped fresh oregano
- 1 cup chopped roasted red peppers
- 8 large eggs
- 1/4 cup heavy whipping cream
- 1 cup crumbled feta cheese
- Pinch of smoked salt
- Freshly ground black pepper
- Sour Cream Sauce:
- 1 bunch fresh chives, chopped
- 1 lemon, zested and juiced
- 1 cup sour cream
- 1/4 cup extra-virgin olive oil
- Salt and freshly ground black pepper

- 1/4 cup(s) roasted red peppers, water-packed, blotted dry, finely diced
- 3 Tbsp scallion(s), thinly sliced
- 3 Tbsp cilantro, fresh, chopped (plus extra leaves for garnish)
- 2 tsp canned chipotle sauce
- 1/4 tsp table salt
- 1/4 tsp ground cumin
- 3 small head(s) endive, Belgian (about 24 leaves)
Basil & Spinach Quiche

Heat up some extra virgin olive oil in a heavy skillet
- 14 large leaves of baby spinach
- 10 leaves of fresh basil
- 1/2 lg. sweet onion
- 3 big cloves of garlic (optional)
- 1/2 lg. red pepper
- 3 big mushrooms
- 1/2 lg. zucchini
- 6 eggs
- 1/2 cup flour
- 3/4 cup milk
- Grated parmesan cheese
- salt & pepper to taste (a little Ceyenne pepper if you like ti spicy)

1) To make the dough: Mix together the flour and salt
- DOUGH
- 2 cups King Arthur Unbleached All-Purpose Flour
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup sour cream
- 1/4 cup butter, room temperature
- FILLING
- 1 cup warm mashed potato
- 1 cup sharp cheddar cheese, shredded
- TO FINISH
- 1/4 cup butter
- 2 large shallots, diced; OR one medium onion, thinly sliced
Zucchini-Cheese Pancakes

1) Preheat a griddle or frying pan over medium-high heat; if you have an electric griddle, set the heat to 400F
- 4 large eggs, lightly beaten
- 1/4 cup olive oil or vegetable oil
- 2 teaspoons salt, to taste
- 1/2 teaspoon freshly ground black pepper or coarse black pepper
- 2/3 cup chopped chives or scallions; about 1 bunch scallions, trimmed and chopped
- 1 teaspoon dried basil*
- 1 teaspoon dried oregano*
- 4 cups coarsely grated zucchini; about one 10" zucchini
- 1 cup freshly grated Parmesan, Cheddar, Monterey Jack or other cheese (or a combination)
- 1 3/4 cups King Arthur Unbleached All-Purpose Flour
- Substitute 2 teaspoons Pizza Seasoning for the dried herbs, if desired, reducing salt to 1 1/2 teaspoons.

- Salsa:
- 2 tablespoons Kikkoman organic soy
- sauce
- 1 tablespoon Thai chile paste
- 2 cloves fresh garlic, finely minced
- 2 tablespoons sesame oil
- 1 tablespoon avocado oil, plus more for frying
- 8 ounces tempeh, cut into 2-inch square pieces
- 2 cups seeded watermelon
- 1/2 yellow bell pepper
- 3-4 scallions, thinly sliced
- 1 teaspoon finely minced cilantro
- 1 teaspoon grated fresh ginger
- 2 teaspoon mirin
- 1 teaspoon fresh lime juice

- 2 poblano peppers
- 4 tomatillos, chopped
- 2 avocados, halved, pitted and flesh diced
- 2 cloves garlic, chopped
