Slow Cooker Chicken, Tomato and White Bean Soup

- 1 medium onion, finely chopped
- 4 celery ribs, finely chopped
- 3 carrots, peeled and finely chopped
- 1 tablespoon minced garlic
- 1/2 teaspoon salt
- 1 teaspoon black pepper
- 2 lbs cooked chicken breasts, cut into bite size pieces (about 4 cups)
- 2 tablespoons butter
- 3 (14 1/2 ounce) cans chicken broth
- 2 chicken bouillon cubes
- 1 (14 1/2 ounce) can diced tomatoes, drained
- 1 (14 1/2 ounce) can white beans, drained and rinsed
- 1/4 cup finely chopped fresh parsley
- 1/4 teaspoon Tabasco sauce
Fried Mini Pork Meatballs

Place a sauté pan over medium high heat
- 1/2 cup onion, minced
- 2 cloves garlic, minced or grated on a microplane
- 1/2 cup breadcrumbs
- 1 pound ground pork, 80/20

- SALAD:
- 2 ears fresh corn
- 1 cup red onion, chopped
- 1 (14.5-ounce) can black beans
- 1 red bell pepper, diced (about 1-cup)
- 1/2 cup loosely packed fresh chopped cilantro (plus a bit more for garnish, if desired)
- 1 avocado
- DRESSING:
- 2 tablespoons red wine vinegar
- 2 tablespoons fresh lime juice, from 1 to 2 limes
- 2 tablespoons honey
- 1/4 cup plus 2 tablespoons vegetable oil
- 1 large garlic clove, roughly chopped
- 1/4 teaspoon dried oregano
- 3/4 teaspoon cumin
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 canned chipotle peppers in adobo sauce (2 peppers, not 2 cans; use smaller peppers and if they are all large, use only 1-1/2)

One Skillet Paleo Mediterranean Chicken

You just can’t go wrong with a meal that includes tomatoes, olives, artichokes, spinach and some tasty chicken ...
- 1/2 yellow onion, diced
- 2-3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 3 Roma tomatoes, diced
- 8 oz artichoke hearts, liquid drained
- 1/2 cup sun-dried tomatoes, chopped
- 1/3 cup Kalamata olives, chopped
- 1 lb pre-cooked chicken ( I used organic oven-roasted sliced chicken breasts from True Story Foods )
- Fresh spinach – a couple of handfuls
- 2-3 Tbsp olive oil or ghee (1-2 tbs to sauté the veggies, another 1 tbs for cooking)
- 1 Tbsp balsamic vinegar
- 1 tsp dried parsley
- 1 tsp dried oregano
- 2 Tbsp fresh basil, chopped for garnish

My Favorite Chili

This is the only chili recipe I've used for the last 8 years or so
- 1 cup onion, diced
- 1 cup green pepper, diced
- 1 large celery rib, diced
- 3 garlic cloves, minced
- 3 tablespoons vegetable oil
- 4 lbs ground beef
- 1 1/2 teaspoons jalapeno peppers, seeded and diced
- 1 tablespoon ground cumin
- 1 teaspoon garlic salt
- 1 teaspoon onion salt
- 1 teaspoon Tabasco sauce (or to taste)
- 1 1/2 bay leaves, crumbled
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 teaspoon Mrs. Dash seasoning mix
- 1/2 teaspoon red pepper flakes
- 1/2 cup chili powder
- 2/3 cup dark beer
- 1 (16 ounce) can stewed tomatoes
- 1 (8 ounce) can tomato paste
- 1 teaspoon Worcestershire sauce
- 2 tablespoons honey
- 1 1/2 cups water
- kidney bean (optional)
