steak & creamy garlic shrimp (surf and turf)

Let steaks sit out at room temperature for 15-30 minutes
- Steaks:
- 4 New York Steak strip steaks (Porterhouse steaks)
- Salt and pepper to season
- 1-2 tablespoons olive oil
- Creamy Garlic Shrimp:
- 3 tablespoons unsalted butter, divided
- 8 ounces (250 g) shrimp deveined, tails on or off
- 4 cloves garlic (or 1 tablespoons minced garlic)
- 1/4 cup dry white wine or low-sodium chicken broth
- 3/4 cup heavy cream* (thickened cream)
- 1/4 cup fresh shredded parmesan cheese
- Salt and pepper to taste
- 1 tablespoon fresh parsley chopped
Slow Cooker Apple Crisp

Instructions Mix the topping ingredients together, cutting the butter in
- Topping:
- 1/3 cup white sugar
- 1 tsp. cinnamon
- pinch nutmeg
- 1 Tbsp. cornstarch
- 1/2 tsp. ginger
- 1 tsp. dried granulated orange peel (optional)
- 5 cups apples, peeled and sliced
- Juice of 1/2 lemon
- 1 cup brown sugar
- 3/4 cup flour
- 1/2 cup oats
- 1/2 cup butter
CHICKEN TETRAZZINI CASSEROLE

Preheat oven to 375º F and lightly spray 9×13-inch baking dish with cooking spray
- 1 pound whole-wheat linguine (or spaghetti)
- 1 1/2 pounds cooked chicken breast, shredded (3-4 cups)
- 8 oz peas
- 8 oz cooked carrots
- 2 1/2 cups low-sodium chicken stock
- 1 cup 2% milk
- 1 cup white onion, chopped
- 3 cloves garlic, minced
- 2-3 T all-purpose flour
- 2/3 cup Parmesan cheese, divided
- 1/2 cup dry white wine
- 1/3 cup low-fat cream cheese
- 1 tablespoon olive oil
- 1 1/2 tablespoons unsalted butter
- salt and freshly ground pepper, to taste
- toasted almonds, optional, garnish
Burgundian Gougères

Preheat the oven at 380°F In a medium saucepan, bring the water, butter, and salt to a boil over high heat
- 1 teaspoon sea salt or coarse salt
- 1 stick of salted butter
- 1 cup all purpose flour
- 4 large eggs
- 3 ounces grated Gruyere or Comte cheese, plus 3 tablespoons
- 1 cup of water
- Parchment paper
Pumpkin Pie Cupcakes

Instructions Preheat the oven to 350 F
- 15 oz pumpkin puree
- 3/4 cup sugar
- 2 eggs
- 1 tsp vanilla
- 3/4 cup evaporated milk
- 2/3 cup flour
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 2 tsp pumpkin spice
- Whipped cream
Gateau Reine de Saba

Heat oven to 325 degrees. Butter a 9-inch springform pan, and line the side wall with parchment paper
- For the Glaze:
- 12 tablespoons (1 1/2 sticks) butter, more for pan
- 6 ounces bittersweet chocolate, chopped into small pieces
- A few drops almond extract
- 2 tablespoons strong coffee
- 4 large eggs, separated
- Pinch of salt
- 1 cup sugar
- 1 3/4 cups finely ground almonds
- 2 tablespoons sugar
- 1 tablespoon corn syrup
- 4 ounces bittersweet chocolate, chopped into small pieces

- 1/2 cup distilled white vinegar
- 3 tablespoons sugar
- 3 tablespoons vegetable oil
- 2 1/2 teaspoons dry mustard
- 1 teaspoon celery seeds
- 1 medium cabbage (about 1 1/4 pounds), thinly sliced
- 1 large onion, thinly sliced
- 1 large green bell pepper, thinly sliced
Homemade Monkey Bread

No monkeying around here; homemade monkey bread is the bee's knees and a sweet treat for the whole family to eat!
- DOUGH:
- 1 (2 1/2 teaspoon) package active dry yeast (recommended: Red Star Platinum)
- 1/4 cup warm water (110°F-115°F)
- 1 1/4 cups warm 2% milk (110°F-115°F, 2% or higher milk fat, no lower)
- 1/3 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon salt
- 5 cups all-purpose flour
- COATING:
- 3/4 cup unsalted butter
- 1 and 1/4 cups granulated sugar
- 1 Tablespoon ground cinnamon
- 2/3 cup light or dark brown sugar
- 1 teaspoon vanilla extract
- VANILLA GLAZE:
- 1 cup confectioners' sugar
- 3 tablespoons heavy cream (or milk for a less creamy texture)
- 1/2 teaspoon vanilla extract
Crab Bisque

1. Remove the claws from the crabs and cut the bodies into quarters
- 4 Dungeness crabs
- 3 tablespoons olive oil
- 1 carrot, chopped
- 2 stalks celery, chopped
- 3 tomatoes, chopped
- 5 cloves garlic, chopped
- 5 shallots, chopped
- 3 sprigs fresh tarragon leaves, chopped
- 3 tablespoons Cognac
- 2 cups dry white wine
- 2 tablespoons tomato paste
- 10 cups fish stock or water
- Cayenne pepper
- Pinch dried thyme
- 1 bay leaf
- 2 cups heavy cream
- 1 lemon, juiced
- Salt
- Freshly ground pepper
- 1 tablespoon minced chives or parsley leaves
