Iraqi Lamb and Eggplant Stew with Pitas

Step 1 In a bowl, dissolve 2 teaspoons of salt in 1 quart of water
- Kosher salt
- 1 large eggplant (1 1/2 pounds), sliced crosswise 1/2 inch thick
- 1/4 cup plus 2 1/2 tablespoons vegetable oil
- 4 lamb shanks (about 1 1/4 pounds each)
- Freshly ground pepper
- 1 large white onion, chopped
- 1/2 cup pomegranate molasses (see Note)
- 1/2 cup dried yellow split peas (3 ounces)
- 4 dried red chiles
- 2 teaspoons baharat spice blend (see Note) or garam masala
- 2 teaspoons ground coriander
- 8 small pita breads, warmed and torn into large pieces
Cranberry & Rosemary White “Christmas” Sangria

1. Sangria is a fairly simple recipe
- 1 Granny Smith Apple
- 1 Braeburn Apple
- 1 heaping Cup Fresh Cranberries
- 1 large Sprig Rosemary
- 1 Bottle Pinot Grigio
- 1/2 Cup White Grape Juice
- 1/4 Cup Sugar (more, for garnish)
- 1 Can Club Soda
Spiced Leg of Lamb on the Grill

Serves 4-6 Boil the wine with the sugar, peppercorns, cinnamon, cloves, cumin, coriander, and cardamom
- 4 pounds boneless butterflied leg of lamb
- 2 cups red wine
- 1 tablespoon sugar
- 1 tablespoon black peppercorns
- 1 cinnamon stick
- 6 cloves
- 1 tablespoon cumin, ground
- 1 tablespoon coriander, ground
- 2 pieces cardamom
- 2 tablespoons ginger, minced
- 2 tablespoons garlic, crushed
- 1 sprig mint leaves
- 1 piece orange or lemon peel
- 1 cup low-sodium soy sauce
- salt and pepper
Chicken Corn Fritters Recipe

Place corn in a large bowl; lightly crush with a potato masher
- GREEN CHILI SAUCE:
- 1 can (15-1/4 ounces) whole kernel corn, drained
- 1 cup finely chopped cooked chicken
- 1 egg, lightly beaten
- 1/2 cup milk
- 2 tablespoons butter, melted
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1-3/4 cups all-purpose flour
- 1 teaspoon baking powder
- Oil for deep-fat frying
- 1/3 cup butter, cubed
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon garlic powder
- 1/8 teaspoon ground cumin
- 1 can (4 ounces) chopped green chilies
- 1 cup milk
- Shredded cheddar cheese, optional
