Preheat oven to 400 degrees F (200 degrees C)
- 1 pound sausage

Preheat oven to 425ºF, and prepare a 9x9 baking dish with butter
- 1 1/2 lbs butternut squash, peeled and sliced 1/4-inch thick
- 2 Tbsp olive oil
- Salt and pepper
- 3 Tbsp thyme, picked
- 1 1/2 lbs Yukon Gold potatoes, washed and sliced 1/4-inch thick
Key Lime Pound Cake with Key Lime Cream Cheese Icing

Preheat oven to 300°. Cover inside of 10 inch tube pan with non-stick spray
- Icing:
- 4 sticks butter, that’s 1 pound, room temperature
- 3 cups sugar
- 6 large eggs, room temperature
- 4 cups all-purpose flour
- 1/2 cup fresh key lime juice
- 1/4 cup evaporated milk, (I always keep a good number of those small, 5 ounce cans in my pantry.)
- 4 teaspoons key lime zest, minced
- 1 teaspoon vanilla
- 8 ounces cream cheese, room temperature
- 3-4 tablespoons butter, room temperature
- 4 cups confectioner’s sugar
- 1/4 cup freshly squeezed key lime juice
- 2-3 teaspoons key lime zest
- 1 teaspoon vanilla extract
Cream-Filled Strawberries

Remove stems from strawberries; cut a deep X in the top of each berry
- 18 large fresh strawberries
- 1 cup cold fat-free milk
- 1 package (1 ounce) sugar-free instant vanilla pudding mix
- 2 cups reduced-fat whipped topping
- 1/4 teaspoon almond extract
Oreo Cream Cheese Truffles

Finely crush the Oreos. This can easily be done in your food processor (I used my Blendtec)
- 1 15 oz package Oreo cookies
- 1 8 oz package cream cheese, softened
- 1 package chocolate chips
Deep-Fried Oysters

Reserve buttermilk in separate container
- OYSTERS
- 1 pint Southern oysters (usually 20 to 30, preferably no larger than a half dollar), shucked and stored in their own liquor
- BREADING INGREDIENTS
- 1 pint buttermilk
- 1 dry pint cornmeal (about 2 1/3 cups); I get a crisp crust by using Anson Mills Antebellum fine yellow cornmeal
- 1 dry pint all-purpose flour (about 2 1/3 cups)
- 1 tbsp. Creole seasoning
- 1 tsp. kosher salt
- RÉMOULADE
- 1 cup mayonnaise (preferably homemade)
- 1/2 cup Creole mustard (like Zatarain's)
- 2 tbsp. hot sauce (preferably Louisiana style, like Crystal or Trappey's)
- 1 tbsp. honey
- 1 tsp. finely chopped garlic
- 1/8 tsp. cayenne
- 1/2 tsp. filé powder
- 1/4 cup minced green onion

- 6 tablespoons unsalted butter
- 1 clove garlic, minced
- 1/4 cup plus 2 tablespoons Frank's Red Hot Original Cayenne Pepper Sauce (or similar brand)
- 1/4 teaspoon kosher salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon chili powder
- 3/4 teaspoon sugar
