  • 1 1 1 can low sodium cut green beans
  • 1 1 1 package Ore Ida Tater Tots
  • 2 2 cups Marble Jack cheese

This works very well with venison steaks or chops, follow the same process as for beef

  • 1 pound filet mignon or mignon tips (cut into 2 inch long and 1/4 inch wide)
  • 3 tablespoons butter
  • 1 small onion, finely chopped
  • 1 pound mushrooms, domestic or wild, caps only thinly sliced
  • 1/4 cup sherry or red wine
  • 1/2 cup beef broth
  • 1 teaspoon Dijon mustard
  • 1/4 cup heavy cream
  • 1/2 cup sour cream
  • 2 teaspoons flour
  • 2 tablespoons fresh thyme
  • 2 tablespoons minced parsley
  • Salt and freshly grounded black pepper
  • 8 ounces medium egg noodles, cooked

Preheat oven to 375°F. Mix all the stuffing ingredients in a bowl

  • 2 Skinless Chicken Breasts; boneless; flattened
  • Stuffing
  • 3/4 cup Low-Fat Feta Cheese; crumbled
  • 1/2 cup packed; Chopped Baby Spinach
  • 1/2 cup Fresh Chopped Parsley
  • 1 teaspoon Minced Garlic
  • 1 teaspoon Olive Oil
  • 1 teaspoon Ground Black Pepper
  • Sauce
  • one 14 ounce can Tomato Sauce
  • 1 diced Mango; peeled and seeded
  • 1/4 teaspoon seeded and diced Jalapeno Peppers
  • Salt and Pepper; to taste
  • Garnish with 1/2 cup grape tomatoes split in half
