Tater Tot Hotdish

A classic that's easy to make; I use cream of chicken instead of cream of mushroom soup - feel free to experiment
- 1 1 1 pound ground beef, ground turkey or ground chicken
- 2 2 2 cans Campbell's Healthy Request Cream of Chicken soup
- 1 1 1 can low sodium sweet corn
- 1 1 1 can low sodium cut green beans
- 1 1 1 package Ore Ida Tater Tots
- 2 2 cups Marble Jack cheese
Beef Stroganoff for Noodles

This works very well with venison steaks or chops, follow the same process as for beef
- 1 pound filet mignon or mignon tips (cut into 2 inch long and 1/4 inch wide)
- 3 tablespoons butter
- 1 small onion, finely chopped
- 1 pound mushrooms, domestic or wild, caps only thinly sliced
- 1/4 cup sherry or red wine
- 1/2 cup beef broth
- 1 teaspoon Dijon mustard
- 1/4 cup heavy cream
- 1/2 cup sour cream
- 2 teaspoons flour
- 2 tablespoons fresh thyme
- 2 tablespoons minced parsley
- Salt and freshly grounded black pepper
- 8 ounces medium egg noodles, cooked
Healthy Stuffed Chicken

Preheat oven to 375°F. Mix all the stuffing ingredients in a bowl
- 2 Skinless Chicken Breasts; boneless; flattened
- Stuffing
- 3/4 cup Low-Fat Feta Cheese; crumbled
- 1/2 cup packed; Chopped Baby Spinach
- 1/2 cup Fresh Chopped Parsley
- 1 teaspoon Minced Garlic
- 1 teaspoon Olive Oil
- 1 teaspoon Ground Black Pepper
- Sauce
- one 14 ounce can Tomato Sauce
- 1 diced Mango; peeled and seeded
- 1/4 teaspoon seeded and diced Jalapeno Peppers
- Salt and Pepper; to taste
- Garnish with 1/2 cup grape tomatoes split in half
