- Cake:
- 1 1/4 c corn oil
- 2 c sugar
- 2 c flour
- 2 tsp cinnamon
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 4 eggs
- 4 c grated carrots
- 1/2 c drained, crushed pineapple
- 1 c chopped pecans (optional)
- 1 c raisins soaked in hot water to soften
- Frosting:
- 8 oz unsalted butter
- 8 oz cream cheese
- 1 lb of powdered sugar
- 1 tsp vanilla

- 1/2 cup finely shredded Parmesan cheese, plus more for garnish

Herb-Stuffed Grilled Chicken with Spinach and Tomatoes

Preheat oven to 400F. On a clean work surface, slice breasts almost in half horizontally and open them like a book
- 2 lrg boneless skinless chicken breasts
- 4 oz goat cheese
- 1 c spinach, washed and coarsely chopped
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 14 oz artichoke hearts, drained and quartered
- 2 tbs pitted kalamatta olives, chopped
- 1 tbsp sherry vinegar
- 1/2 c low-sodium chicken broth
Lobster Bisque

Preheat the oven to 350F. Lay the lobster out flat and split in half lengthwise
- 1 cooked lobster (about 1 1/2 lbs)
- 2 tbsp vegetable oil
- 1/2 c butter
- 2 shallots, minced
- juice of 1/2 of lemon
- 3 tbsp brandy
- 1 bay leaf
- 1 sprig of fresh parsley, plus extra for garnish
- 1 blade of mace
- 3 tbsp flour
- 3 tbsp heavy cream
- salt and pepper

- 2 1/2 lb sweet potatoes
- 1 1/2 c half and half
- 1/3 c packed brown sugar
- 1/3 c sugar
- 2 lrg eggs
- 2 tsp vanilla
- 1/2 tsp cinnamon
- dash of nutmeg
- butter and pecan halves optional
Balsamic Chicken and Fresh Mozzarella

- 10 skinless, boneless chicken breast halves
- 1 (16 fl oz) bottle balsamic vinaigrette salad dressing
- 2 tomatoes, sliced
- 2 pounds fresh mozzarella cheese, sliced
- 1 bunch fresh basil leaves
- 2 tablespoons balsamic vinegar
- salt and freshly ground black pepper to taste
