Sweet Potato Casserole

  • 2 1/2 lb sweet potatoes
  • 1 1/2 c half and half
  • 1/3 c packed brown sugar
  • 1/3 c sugar
  • 2 lrg eggs
  • 2 tsp vanilla
  • 1/2 tsp cinnamon
  • dash of nutmeg
  • butter and pecan halves optional


Servings 8


Step 1

Preheat oven to 325F.
Peel-Boil-Drain potatoes.
Mix potatoes and half and half in mixer.
Add sugar, eggs, vanilla, and spices. Mix until thick and fluffy.
Pour into buttered 13x9 casserole
Dot with small chunks of butter and pecans.
Bake for 45 minutes. It's done when knife inserted comes out clean.
