Eggplant Dip

1. HEAT oven to 400°F. 2
- 1 lb eggplant
- 1/4 cup fresh parsley, chopped
- 1/4 cup 2% plain Greek-style yogurt
- 2 Tbsp tahini paste
- 1 1/2 Tbsp fresh lemon juice
- 1 tsp chopped garlic
- 1/2 tsp cumin
- 1 Tbsp extra virgin olive oil
Smooth 'n Creamy Frosting

Combine pudding mix, sugar and milk in small bowl
- 1 pkg. (4 serving size) jello instant pudding & pie filling, any flavor
- 1/4 cup confectioners sugar
- 1 cup COLD milk
- 3 1/2 cups or 1 container (8 oz.) cool whip whipped topping, thawed

- 2 tsp carrier oil – sweet almond oil or jojoba oil
- 48 drops essential oils
- Old lip balm tin (the size I used was 1/2 ounce)
Sweet Potato Casserole

- 6 cups sweet potatoes, baked, peeled & mashed
- 1/3 cup butter
- 1/2 cup sugar
- 1/2 tsp. salt
- 2 eggs
- 1 tsp. vanilla
- 2 tsp. flour
- 1 cup brown sugar
- 1/3 cup butter
- 1/2 cup flour
- 1 cup chopped pecans
English Toffee

I love English Toffee! Who would believe it could be so EASY to make
- 1/2 cup chopped toasted almonds or pecans (for bottom layer)
- 1 cup butter (salted)
- 1 cup sugar
- 1 T light corn syrup
- 3 T water
- 3/4 cup semisweet chocolate chips
- 1/2 cup chopped toasted almonds or pecans (for top layer)
Leek, Spinach, and Potato Soup

Leeks contain inulin, an insoluble fiber that travels to the colon and ferments into healthy micro flora
- Makes 4 2-cup servings
- 1 pound leeks
- 1 pound fresh spinach, kale, or Swiss chard
- 6 cups low-sodium or homemade vegetable broth, divided
- 2 medium Yukon Gold potatoes, peeled and chopped
- freshly ground black pepper, to taste
- 1/4 cup soy or rice milk
- 1 teaspoon dried tarragon

Stir all ingredients together and pop into a clear deodorant container or a small mason jar
- 1/4 cup Coconut Oil
- 1/8 cup Cornstarch
- 1/8 cup Arrowroot Powder
- 1 tsp. Baking Soda
- 5 drops of your favorite doTERRA Essential Oil
Ratatouille

Don't peel the vegetables—otherwise they'll become a puree
- 3 Tbsp olive oil
- 1 med yellow onion, peeled and chopped
- 3 cloves garlic, minced
- 2 green bell peppers, sliced in 1/2" strips
- 2 med zucchini, sliced in 1/2" rounds
- 2 sm eggplant, sliced in 1/2" rounds (about 1 lb)
- 4 lg tomatoes, peeled and chopped, or 1 can (28 oz) tomatoes, drained
- 2 tsp dried thyme
- 1 1/2 tsp salt
- Freshly ground black pepper
- 2 Tbsp chopped parsley
Skinny Shake
