Loaded Apple Pie

- Pie Filling:
- Bottom Crust: Flaky Pie Dough
- 1 1/2 cups bleached all-purpose flour
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp baking powder
- 8 TBSP butter (1 stick) <---lots of butter in this recipe :)
- 2 TBSP cold water
- Top Shell: Sweet dough for pies
- 1 1/4 cup bleached all-purpose flour
- 3 TBSP sugar
- 1/4 tsp baking powder
- 1/8 tsp salt
- 4 TBSP butter
- 1 egg
- 2 lbs apples (I used a mix of fuji and golden delicious; I'm not a fan of really tart apples)
- 2/3 cup light brown sugar
- 2 TBSP all-purpose flour
- 1 tsp ground cinnamon
- 1 tsp finely grated lemon zest
- Crumble Topping that goes on top of the pie filling
- (this is an extra thing I added to the pie, but it makes a big difference)
- 3 TBSP apple sauce (not part of the recipe, but it added good flavor)
- 1/3 cup light brown sugar
- 1 cup flour
- 3-4 TBSP butter
- 2-3 TBSP apple juice (I love Simply Apple)
Baked Parmesan Garlic Chicken

Coconut Macaroons

Place the oven racks in the upper and lower thirds of the oven
- Two 7-ounce bags sweetened shredded coconut
- 1 14-ounce can sweetened condensed milk
- 1 teaspoon vanilla extract
- 2 large egg whites
- 1/4 teaspoon salt
- 1/2 cup milk chocolate chips, melted, if desired
Sno Ball Brownies

Bake brownies in a 13x9 pan and cool completely
- 1 family-size (13x9) batch of brownies
- 1 16-oz can vanilla cake frosting
- 1 7-oz jar marshmallow cream (of "fluff")
- 3 cups sweetened flaked coconut
- 4-8 drops pink food coloring

In a Large Bowl combine the Sweetened Condensed Milk, Coconut, Crushed pecans & powdered sugar and mix well, set in...
- 1 can of Eagle Brand Sweetened Condensed Milk (no substitutes)
- 1 1/2 cups of finely chopped/crushed pecans or almonds (optional) Any crushed nut would work as well
- 1 Pound sweetened Coconut
- 1/2 cup of powdered sugar
- 12 Oz of ghirardelli melting Chocolate (I used half white and half milk chocolate)
Healthy Applesauce Oat Muffins

Directions: Preheat oven to 425 degrees
- 1 3/4 cups all purpose flour
- 1 cup quick cooking oats
- 1/4 teaspoon salt
- 1 1/2 teaspoon cinnamon
- 1 1/2 teaspoon baking powder
- 1 cup sugar
- 1 cup coconut oil, melted
- 2 eggs
- 1/4 cup nonfat, plain Greek yogurt
- 1 cup chunky or homestyle sweetened applesauce
- 1/2 teaspoon vanilla extract
Irish Cream Bundt Cake

1. Preheat oven to 325°F
- CAKE:
- 1 cup chopped pecans
- 1 package yellow cake mix
- 3.4oz. package instant vanilla pudding mix
- 4 large eggs
- 1/4 cup water
- 1/2 cup vegetable or canola oil
- 3/4 cup Irish Cream liqueur
- GLAZE:
- 1/2 cup (1 stick) butter
- 1/4 cup water
- 1 cup granulated white sugar
- 1/4 cup Irish Cream liqueur
Cream Cheese Cookie Dough Frosting

Cream softened cream cheese and butter together in a large bowl
- 4 oz. cream cheese, softened
- 5 Tbsp. butter, softened
- 2/3 cup brown sugar
- 1 tsp. vanilla
- 1 envelope Dream Whip, you can omit this. It just helps a little with the consistency
- 2 Tbsp. milk, more if needed to reach desired consistency
- 1/2 cup flour
- 3 cups powdered sugar, more if needed to reach desired consistency
- 2/3 cup mini chocolate chips

For the Pastry Cream: In a medium heatproof bowl, mix together the sugar and egg yolks
- Ingredients:
- Makes one two-layered 8-inch cake

- For the Pastry Cream:
- 1/4 cup granulated sugar
- 3 large egg yolks
- 1/8 cup (2 tablespoons) all-purpose flour
- 3 tablespoons cornstarch
- 1 1/4 cups milk
- 1 teaspoon vanilla
- For the Sponge Cake:
- 5 large eggs
- 3/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup cake flour
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 tablespoons milk
- 2 tablespoons unsalted butter
- For the Chocolate Glaze:
- 4 ounces semisweet chocolate, chopped (I used chocolate chips)
- 1/2 cup heavy whipping cream
- 1 tablespoon unsalted butter
- (I omitted the butter because I got lazy)

- 3 Cups - Coconut Milk
- 4 - Eggs, Large
- 1 1/2 Cups - Granulated Sugar
- 2/3 Cups - Cornstarch
- 1/2 Teaspoon - Salt
- 1 1/2 Cups - Sweetened Flaked Coconut
- 1/2 Teaspoon - Coconut Extract

- TOPPING:
