Pecan Coconut Praline Cookies - No-Bake

Set pecans, coconut, and vanilla off to the side
- 2 1/2 cups sugar
- 1/2 cup evaporated milk
- 1/2 cup corn syrup
- 1/2 cup butter
- 1 teaspoon vanilla
- 2-2 1/2 cups chopped pecans
- 2 1/2 cups grated coconut

- 1 box strawberry cake mix
- 12 oz. diet 7-up
Crunchy Apple & Grape Salad

Mix all the dressing ingredients together in a medium size bowl
- DRESSING:
- 1 cup low fat vanilla yogurt
- 1/3 cup granulated sugar
- 1/3 cup brown sugar
- 1/2 cup mayonnaise
- juice from 1/2 a lemon
- 1/2 teaspoon ground cinnamon
- 2 granny smith apples, cored and diced
- 2 red delicious apples, cored and diced (I used Gala, you can use any kind you like)
- 1 pear, cored and diced
- 1 stalk celery, diced
- 1/2 cup slivered almonds
- 1/2 cup walnuts, chopped
- 2 cups seedless grapes, halved
Opa's Cake

Preheat oven to 325°. Grease and flour a large tube or fluted tube pan and set aside
- Frosting:
- 4 oz. sweet or bittersweet chocolate
- 3 sticks butter (11/2 Cups), room temperature
- 3 3/4 Cups powdered sugar
- 6 eggs, room temperature
- 1 TB. PURE VANILLA EXTRACT
- 3 Cups flour
- 1/4 Cup light corn syrup
- 2 TB. butter
- 3 TB. water
- 6 oz. chocolate chips
- 1 tsp. PURE VANILLA EXTRACT
- 2 Cups powdered sugar

- DO NOT ADD EGGS,WATER,MILK,OIL -ONLY DRY CAKE MIX AND 1 OTHER INGREDIENT AS NOTED IN EACH RECIPE.
- ANGEL FOOD MIX:
- 18 (?) oz angel food cake mix, lemon
- 21 oz can lemon pie filling
- or...
- REGULAR CAKE MIX:
- 18 oz regular cake mix
- 21 oz can pie filling to coordinate with the cake mix you are using
- or…
- SODA-POP RECIPE:
- 12 oz can (1 1/2 cups) soda/pop of choice to coordinate with cake mix( can use any carbonated drink)
- 18 oz cake mix, any flavor to go with soda/pop you choose
Brown Butter Rum Banana Bread

Yield: Makes one 9 X 5-inch loaf
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon Kosher salt
- 1/2 teaspoon nutmeg
- 2 eggs
- 1 1/2 cups mashed banana (about 5 medium)
- 1 cup granulated sugar
- 1/2 cup (8 tablespoons) unsalted butter
- 1/3 cup rum
Lemon Crinkle Cookies

Preheat oven to 350 degrees
- 1/2 cups Butter, Softened
- 1 cup Granulated Sugar
- 1/2 teaspoons Vanilla Extract
- 1 whole Egg
- 1 teaspoon Lemon Zest
- 1 Tablespoon Fresh Lemon Juice
- 1/4 teaspoons Salt
- 1/4 teaspoons Baking Powder
- 1/8 teaspoons Baking Soda
- 1-1/2 cup All-purpose Flour
- 1/2 cups Powdered Sugar
Pineapple Dream Dessert

Preheat oven to 300 F. Melt butter in the microwave and allow to cool
- Crust:
- 2 1/2 cups graham crumbs (2 sleeves)
- 1/2 cup unsalted butter
- Layers:
- 2 cups of powdered sugar, sifted
- 1/2 cup unsalted butter, softened
- 4 oz cream cheese, softened
- 8 oz container Cool Whip
- 20 oz can crushed pineapple, drained well

- 70 gr. egg white (from about 2 eggs)
- A few drops of bitter almond extract (if you can’t find it – I saw some on Amazon – you can use regular almond extract)
- Candied cherries, almonds, or candied citrus, to top the cookies
