Peppermint Hot Chocolate

Peppermint Hot Chocolate is one of our favorite treats during the holidays
- 2 cups of milk
- 2 cups of heavy cream
- 1 1/2 cups of semi sweet chocolate chips
- 1/2 teaspoon of vanilla extract
- 1/2 teaspoon of peppermint extract
- whipped cream, for garnish
- crushed candy cane, for garnish
Mrs. Schroeder's Brown Cookies

In a large bowl, cream together the shortening and sugar
- 1/2 Cup shortening
- 1/2 Cup sugar
- 1/2 Cup dark corn syrup
- 2 eggs, beaten
- 1/2 tsp. salt
- 1 tsp. PURE VANILLA EXTRACT
- 1/4-1/2 tsp. GROUND CARDAMOM
- 1/2 tsp. PENZEYS CINNAMON
- 21/2 Cups flour
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
Coconut Sheet Cake

In a large mixing bowl, measure flour and sugar
- 2 cups flour plus 2 Tablespoon flour
- 2 cups sugar
- 1/2 cup butter
- 1 cup water
- 1/2 cup shortening
- 1/2 cup buttermilk
- 1/2 teaspoon baking soda
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon coconut extract
- 1/4 cup shredded coconut
- COCONUT FROSTING
- 1/2 cup butter
- 6 Tablespoons milk
- 16 oz. powdered sugar
- 1 teaspoon coconut extract
- ADDITIONAL INGREDIENTS
- Sweetened Shredded Coconut for topping
Spiced Pecans

Preheat oven to 275°. In a large bowl, combine the sugar, salt, SPICES, egg white and water
- 3/4 Cup sugar
- 3/4 tsp. salt
- 2 tsp. PENZEYS CINNAMON
- 1/4-1/2 tsp. GROUND CLOVES (recipe calls for 1/2 tsp. but PENZEY'S CLOVES are really strong!)
- 1/2 tsp. GROUND ALLSPICE
- 1/2 tsp. GROUND NUTMEG
- 1 egg white
- 2-1/2 TB. water
- 2 lbs. pecans
Key Lime Coconut Pecan Cake Mix Cookies

Preheat oven to 350 degrees
- 1 box key lime cake mix
- 1 1/2 cups thawed frozen whipped topping
- 1 egg
- 1/2 cup coconut
- 1/2 cup finely chopped pecans
- 3/4 cup powdered sugar
Pecan Pie

1. Preheat oven to 350 degrees F
- 1 cup light corn syrup
- 1 cup granulated white sugar
- 1/4 cup packed brown sugar
- 3 eggs, beaten
- 1/3 cup (2/3 stick) butter, melted and slightly cooled
- 1/2 teaspoon salt
- 3/4 teaspoon vanilla extract
- 1 heaping cup finely chopped pecans
- 1 unbaked pie crust, fitted into a pie pan (edges crimped)

Easiest Pineapple Cake

- THERE IS NO BUTTER OR OIL IN THE CAKE
- 2 c all purpose flour
- 2 c sugar
- 2 eggs
- 1 tsp baking soda
- 1 tsp vanilla
- pinch salt
- 1 - 20 oz can of crushed pineapple ( undrained )
- 1 c chopped nuts, optional
- CREAM CHEESE FROSTING
- 1 stick butter
- 1 - 8 oz cream cheese, softened
- 1 tsp vanilla
- 1 1/2 c confectioners' sugar
Best Carrot Cake w/Cream Cheese Frosting

Preheat oven to 350 degrees
- Cake Ingredients:
- 2 cups sugar
- 1 cup light flavored olive oil
- 4 eggs
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1 teaspoon cinnamon
- 2 cups grated carrots
- Icing Ingredients:
- 1/4 cup butter, softened
- 8 ounces cream cheese, room temperature
- 4 1/3 cups powdered sugar
- 2 teaspoons vanilla
- Optional: 1 cup chopped pecans
- Optional: 1/4 - 1/2 cup heavy cream, half and half or milk
Strawberry Buttercream icing

In the bowl of your electric mixer add the butter, shortening and preserves and mix until smooth and creamy
- 1/2 cup {1 stick} salted butter
- 1/2 cup solid vegetable shortening {I use Crisco}
- 1/3 cup seedless strawberry preserves
- 2 tsp clear vanilla extract {I use Wilton}
- 4 cups powdered sugar {approximately 1 lb}
- 1 tbsp milk
