Refrigerator Cookies

Refrigerator cookies are east to make when you have a little time and need to prepare for a event
- 1/2 pound butter
- 1 egg plus 1 egg yolk
- 1-1/4 cups sugar
- 1 teaspoon vanilla sugar
- 1/2 teaspoon pure vanilla extract
- 2-3/4 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher style flake salt
- 1/2 cup finely chopped nuts
Apple Pie Tacos

Place apples, sugar, cinnamon, nutmeg, and water in a sauce pan
- 4 Apples peeled & sliced
- 1/2 C Sugar
- 2 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1/2 C Water
- Tortilla's (flour) 6" size
- Oil (for frying tortillas)
- 1/2 c sugar-cinnamon mixture
- Whipped cream
Crack Proof: New York Style Cheesecake

1 To prepare crust: In a mixing bowl, combine the crust ingredients together with a fork until evenly moistened
- CRUST
- 2 c finely ground graham crackers (about 30 squares)
- 1/2 tsp ground cinnamon
- 1/2 c unsalted butter, melted (1 stick)
- FILLING
- 4 - (8) oz blocks cream cheese, room temperature
- 1 c sugar
- 4 eggs
- 1 1/2 tsp vanilla extract
- 1 lemon, zest finley grated
- 1 c sour cream
- TOPPING
- 1 pt strawberries
- 1 pt raspberries
- 2 Tbsp butter
- 3/4 c granulated sugar
- 1 tsp corn starch
- 1 lemon, juiced
Potato Bites

Preheat oven to 400*. Spray a mini muffin tin with non-stick spray
- 1 C potatoes, peeled and grated
- 1 egg
- 1/4 C bread crumbs
- 3 T onion, chopped
- 1/2 C sharp cheddar cheese
- 1/2 tsp salt
- 1/4 tsp pepper
Coconut Cream Lemon Cookies

In medium-sized bowl, whisk together flour, baking soda, cream of tartar and kosher salt
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1/2 teaspoon kosher salt
- 1 cup (2 sticks) unsalted butter, at room temperature
- 1 cup granulated sugar, plus more for rolling
- 1 large egg
- zest of 3 lemons
- 1 tablespoon fresh lemon juice

Combine the sugar, flour, and salt in the top of a double boiler over boiling water; stir in milk slowly
- 3/4 cup light brown sugar -- firmly packed
- 5 tablespoons flour
- 1/2 tsp salt
- 2 cups whole milk
- 2 egg yolks -- lightly beaten
- 2 tablespoons butter
- 1 teaspoon vanilla
- 1 baked pie shell -- 9-inch

- 1 egg white
- 4 teaspoons water
- 1 tablespoon pure vanilla extract
- 1 cup white sugar
- 2 teaspoons cinnamon
- 3/4 teaspoon salt

- 1 can (14 ounce) Mandarin oranges, drained, 1/2 cup juice reserved
- 4 eggs

- TOPPING:
- 1 box (4 ounces) vanilla instant pudding mix
- 1 can (20 ounce) crushed pineapple, juice reserved
- 1/2 cup powdered sugar
