Maxine's Wine & Berry Spritzer

Instructions: Squeeze 2 limes into a punch bowl; add juice, wine and soda water
- 5 limes
- 2 liters of soda water (Soda Stream)
- 1 pint of Raspberry sherbet or sorbet
- 1 bottle of sparkling wine or champagne
- 2 cups of cranberry juice
- 1 bag frozen cranberries
- Colored sugar for the rims
Freezer Food Friday – Ginger Snap Cookies

Instructions Cream together brown sugar and shortening
- 1 cup packed dark brown sugar
- 3/4 cup shortening (I use an organic palm shortening)
- 1 large egg
- 1/4 cup molasses
- 2 1/2 cup gluten free bean flour blend (or 9 T garbfava flour, 5 T sorghum flour, 13 T corn starch, and 13 T tapioca starch)
- 2 teaspoons baking soda
- 1 1/2 teaspoon xanthan gum
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon ground dry ginger
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 about 1/2 cup sugar, for rolling sugar
Primal Twice Baked Cauliflower

1. Cook cauliflower until tender (Microwave and cover with NO water added for approximately 6 minutes on high)
- 1/2 head cauliflower (6-7" diameter)
- 1 cup reduced-fat shredded Cheddar cheese
- 1 Tbsp chopped chives
- 1/2 tsp black pepper
- 1 Tbsp salted butter
- 1/4 cup plain low-fat yogurt
- 2 Tbsp bacon bits
- 1 tsp minced garlic
- 1/4 cup reduced-fat sour cream

- 1 pound of boneless, skinless chicken breasts, uncooked (if you're using frozen, it might need to cook a little longer)
- 1 (10 oz) can of Rotel tomatoes, do not drain
- 1 (4 oz) can of chopped green chiles, do not drain
- 1 (14 oz) can of creamed corn
- 1 (10 oz) can of cream of chicken soup
- 1 cup of chicken stock or water
- 1 tablespoon chili powder
- 2 cups frozen corn kernels
- Shredded cheese and/or chopped green onions to garnish

Vanilla Bean Baked French Toast

1. Place sliced bread in a greased 8×8-inch dish, overlapping some slices
- 1 loaf Day-old Bread, cut in 1 inch slices
- 4 whole Large Eggs
- 1 cup Heavy Cream
- 1 cup Whole Milk
- 2 Tablespoons Granulated Sugar
- 1 whole Vanilla Bean, Split In Half Lengthwise, With Seeds Scraped Out
- 1 Tablespoon Maple Syrup
- 1 teaspoon Vanilla Extract
- 1/2 teaspoons Ground Cinnamon
- 1/4 teaspoons Ground Nutmeg
- 1 pinch Salt
- Fresh Fruit For Serving (recommended: blueberries and raspberries)
