Preheat oven to 400 degrees
- 3 cups white flour
- 1/2 teaspoon baking soda
- 2 teaspoons cream of tartar
- 1/2 cup butter, softened
- 2 tablespoons sugar
- 1/2 cup milk or buttermilk
- 1 cup raisins or other dried fruit
- Egg wash, to brush scones
Crispy Smashed Potatoes

Put the potatoes in a large pot and add water to cover by 3 inches
- 3 lb. baby Yukon Gold potatoes, each 1 to 2 inches each in diameter
- Sea salt, to taste
- 1/4 cup olive oil, plus more as needed
- 1 fresh rosemary sprig plus 1/2 tsp. chopped rosemary
- 2 Tbs. unsalted butter
- Freshly ground pepper, to taste
- 1/2 tsp. chopped fresh thyme
- 2 tsp. chopped fresh flat-leaf parsley

- 1 tsp. kosher salt

- 1/2 tsp. light brown sugar

- 1/4 tsp. ground cumin

- 1/4 to 1/2 half small habanero chile, diced

- YUCCA HASH:
- 1 1/2 pounds yucca, washed, peeled and cut into 3/4-inch dice
- 1 bay leaf
- 1/2 head garlic

Prepare the grill for direct cooking over high heat (450° to 550°F)
- SAUCE
- 3 long Anaheim chile peppers
- 3 scallions, root ends discarded, all the rest roughly chopped
- 1/4 cup lightly packed fresh cilantro leaves and tender stems
- 1 small garlic clove
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- Finely grated zest and juice of 1 lime
- 1/4 teaspoon kosher salt
- RUB
- 1 teaspoon pure chile powder
- 1 teaspoon paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon freshly ground black pepper
- 24 large sea scallops, each about 2 ounces
- Vegetable oil

- 2 tablespoons (1 ounce) club soda
- 2 heaping teaspoons superfine sugar
- 15 fresh mint leaves, plus 5 small sprigs for garnish
- 6 tablespoons (3 ounces) Bernheim or other high-quality whiskey
- 2 cups crushed ice

- 1 frozen puff pastry sheet (from a 17 1/4-oz package), thawed
- 2 tablespoons fine dry bread crumbs
- 1 1/2 tablespoons unsalted butter
- 1 1/2 lb Golden Delicious apples (3 medium), peeled, halved lengthwise, cored, and thinly sliced crosswise
- 1/4 cup sugar
- 1/8 teaspoon salt
- 1 cup grated sharp or extra-sharp white Cheddar (3 oz)
