Ingredients

  • For lava beans:
  • 1 quart water
  • 2 fresh lemons, juiced, halves
  • reserved
  • 24 baby artichokes, trimmed and
  • halved
  • 4 cloves garlic finely chopped
  • 1/2 cup Los Ranchos olive oil
  • Salt and freshly ground black
  • pepper
  • 1 quart water
  • 2 pounds fresh fava beans, shelled
  • FOR SALAD:
  • 1/2 pound baby lettuces, rinsed and
  • prepared for tossing

Step 1

Prepare artichokes: In a large saucepan combine water, lemon juice and halves and bring to a boil. Add artichokes and bring back to the boil. Boil until tender, about 15 minutes. Drain in colander for 30 minutes.
Toss artichokes, garlic, oil, salt, and pepper in a bowl. Cover with plastic wrap and marinate several hours or overnight. Prepare fava beans: In a large saucepan bring water to a boil. Add fava beans and blanch 1minute. Drain. Assemble salad: Toss fava beans, artichoke mixture, and baby lettuce together ~ bowl. Serves 6.
