Apricot-Glazed Grilled Chicken

1. Combine first 4 ingredients in a small bowl, stirring well
- 3 tablespoons apricot preserves
- 2 tablespoons red wine vinegar
- 1 1/2 tablespoons extra-virgin olive oil
- 1 garlic clove, minced
- 2 bone-in chicken breast halves, skinned
- 2 bone-in chicken thighs, skinned
- 2 chicken drumsticks, skinned
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon freshly ground black pepper
- Cooking spray
TURKEY AND MUSHROOM SAUTE

- 2 tablespoons turkey fat or butter
- 1 pound mushrooms, sliced
- 1 clove garlic, peeled and finely chopped

- 1 1/2 pounds jumbo shrimp, peeled and deveined
- SALAD:

- 1/2 teaspoon minced fresh garlic
- 1/4 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 5 cups arugula leaves

Chicken Pronto

Brown chicken breasts in oil in a large skillet for about 15 minutes or until lightly browned
- 1 1/2 lb chicken breast halves, skinned and boned
- 1 1/2 tbsp. mild, light flavored olive oil
- 1/4 tsp. black pepper
- 1/4 tsp. salt
- 1 medium tomato, chopped
- 6 pitted black olives, rinsed
- 1 clove garlic (or 2 scallions) minced
- 1/2 c dry sherry or dry white wine
- 1/4 c Low salt chicken broth
- 1/4 c. low fat yogurt
Skordalia Me Kapari (Potato Garlic Dip with Capers)

- 2 cups day-old whole wheat bread, cubed and soaked in water until softened,
- 3 to. 5 cloves garlic, quartered.
- 1/3 cup extra virgin olive ail.
- 1/4 cup capers, preferably salt-packed, rinsed and drained,
- 3-4 tablespoons fresh-squeezed lemon juice.
- 1/2 cup blanched whale almonds, soaked
- overnight in water and drained.
- 1 medium potato, bailed, peeled and mashed.
- Freshly ground white pepper
- Salt to. taste
