MINI CAKES - MOLTEN CHOCOLATE

1. Heat oven to 400°F. Spread very thin layer of softened butter inside four 5-ounce ramekins
- 2 1/2 T. unsalted butter, softened
- 1/2 C. flour
- 6 oz. bittersweet chocolate
- 3 egg yolks
- 4 egg whites
- 1/4 C. granulated sugar
- favorite ice cream for garnish
POUND CAKE - GRILLED CHOCOLATE

- 16 1/2 " slices frozen pound cake
- 1/2 C. chocolate hazelnut spread
- 2 T. butter, softened
Lobster Rolls

1. Combine first 7 ingredients in a medium bowl, stirring well
- 5 tablespoons canola mayonnaise
- 1/4 cup finely chopped celery
- 3 tablespoons minced onion
- 2 tablespoons whole milk Greek-style yogurt (such as Fage)
- 1 1/2 teaspoons chopped fresh dill
- 1/2 teaspoon kosher salt
- 1/8 teaspoon ground red pepper
- 1 pound cooked lobster meat, cut into bite-sized pieces (about 3 1 1/2-pound lobsters)
- 2 tablespoons butter, melted
- 8 (1 1/2-ounce) hot dog buns
- 8 Bibb lettuce leaves
Stir Fried Turkey and Vegetables

In a large saute pan or wok, heat the oil over medium heat
- 1 tablespoons vegetable oil
- 1 tablespoon grated fresh ginger
- 1 clove garlic, peeled and finely chopped
- 3 cups thickly sliced Napa cabbage
- 3 cups thickly sliced bok choy
- 3 cups diced cooked turkey meat
- 2 tablespoons soy sauce or Tamari
Tomatillo Salsa

Prepare medium hot fire in grill
- 2 lb. tomatillos, husked and rinsed
- 2 garlic beads, cloves separated, unpeeled
- 1-2 Serrano chilies
- Salt to taste
- 2 tbs. canola oil
- 1 cup fresh cilantro leaves
- Juice of 2 limes
SUMMER BERRIES & WHITE CHOCOLATE WHIPPED CREAM

In small heavy bottomed saucepan, simmer whipping cream over medium heat (about 10 min)
- 1 (8oz) carton Organic Valley Organic Heavy Whipping Cream
- 1 (4 oz) bar white chocolate, divided
- 1 (16 oz) pkg. organic strawberries, quartered
- 1 (6oz) pkg organic raspberries
- 1 (44oz) pkg organic blueberries
Crab Salad

Mix all ingredients together and chill
- 10 ounces freshly pulled crab meat
- 1/2 each red, yellow and green bell pepper, finely chopped
- 4 teaspoons lemon-infused oil
- 1 teaspoon white wine vinegar
- 1 teaspoon Dijon mustard
- Salt and white pepper to taste

1. Preheat oven to 350°F
- 1 C. butter
- 8 oz. bittersweet chocolate
- 4 eggs
- 4 egg yolks
- 1/2 C. sugar
- 1/2 C. flour
- Pinch of salt
- 2 tsp. vanilla extract
- Vanilla ice cream or whipped cream
FRIDGE CAKE - BITTERSWEET CHOCOLATE AND HAZELNUT

Refrigerate for 24 hours
- 32 graham crackers (one box less one
- sheet of 4 crackers from a 14.4 oz. box)
- 10 to 12 glace cherries, halved
- 1/2 C. whole hazelnuts, halved
- 16 oz. good-quality bittersweet chocolate, broken into pieces
- 12 T. unsalted butter
- 2 T. golden syrup
- 2 T. sugar
- Cocoa powder (optional)
FONDUE - GHIRADELLI'S FABULOUS

1. In a medium saucepan at medium heat, combine milk, vanilla, and butter and heat until mixture just simmers
- 1 1/4 C. milk (or heavy cream)
- 1 tsp. vanilla extract
- 2 T. unsalted butter
- 6 oz. Ghiradelli Milk Chocolate Baking Bar, chopped
- Strawberries, oranges, pineapple, cake, cookies or other dippers
