PANCAKES - LEMON MARSCAPONE FILLED

Using electric mixer fitted with flat beater, beat mascarpone and lemon curd until fluffy, 2-3 minutes
- 1/4 C. mascarpone cheese
- 1/4 C. Meyer lemon curd
- 1 3/4 C. all purpose flour
- 3/4 tsp. baking soda
- 1 1/2 T. granulated sugar
- 1/2 tsp. salt
- Zest of 1/2 lemon
- 3 egg yolks, lightly whisked
- 1 3/4 C. buttermilk
- 3 eggs whites, beaten to stiff peaks
- 7 T. unsalted butter, melted
- Confectioner's sugar for dusting
Shanghai-Style Shrimp with Leeks

Devein 1 lb. medium shrimp place in bowl of water with 1 Tbs salt
- 1 lb. medium shrimp
- 1 Tbs salt
- 1 1/2 Tbs. peanut oil
- 3 slices fresh, peeled ginger
- 3 crushed garlic cloves
- 1 cup shredded leeks
- 1 tsp. sugar
- 1 Tbs rice wine
- 1 tsp. salt
- 1/4 cup rich chicken stock
- 1 tsp. black vinegar
- 2 tsp. sesame oil
OVEN DRIED TOMATOES IN OLIVE OIL

1. Preheat oven to 200 degrees
- 8 lb. tomatoes
- extra virgin olive oil
- fresh oregano
- fresh thyme
Fresh Date Tart

Lightly butter a 9-inch tart pan with a removable bottom
- Pastry for a 9-inch tart pan
- (best is the type made with egg)
- 18 California dates, halved and pitted
- 3 egg yolks
- 2 1/2 tablespoons sugar
- 1/2 vanilla bean, split lengthwise
- 1 cup heavy whipping cream
BONELESS PORK LOIN ROAST WITH APPLE CHUTNEY SAUCE

FOR THE MARINADE: 1. Combine all ingredients in a bowl; mix well
- MEAT:
- 7 lb. boneless loin of pork
- 1 T. cracked black pepper
- MARINADE:
- 1 T. honey
- 1 T. fresh sage leaves,minced
- 1 T. fresh rosemary, minced
- 3 cloves garlic, minced
- 1 tsp. juniper berries, crushed
- 1 T. cracked black pepper
- SAUCE:
- 1.5 oz. Jus de Poulet Lie Gold
- 6 oz. water
- 1 tsp. dried crushed or 1 T. fresh sage minced
- 1 tsp. dried crushed or 1 T. fresh rosemary, minced
- 1 tsp. freshly ground black pepper
- 3 T. heavy cream, light cream or half & half
- 8 oz. apple chutney
- 2 T. Calvados or Apple Schnapps
BAKED SWEET POTATOES WITH MAPLE-JALAPENO SOUR CREAM

Preheat oven to 450° with rack positioned in the center
- FOR THE SWEET POTATOES RUB WITH OIL AND SALT:
- 4 sweet potatoes. scrubbed, dried
- FOR THE TOPPING COMBINE:
- 1/2 cup sour cream or plain yogurt
- 1 T. pure maple syrup
- 2 t. jalapeno, seeded, minced
- 1 t. fresh lime juice
- Salt and Tabasco to taste
- SERVE POTATOES WITH:
- Maple-Jalapeno Sour Cream
- Bacon bits
- Sliced scallions
TRADITIONAL MINT Mojito

Mash mint leaves thoroughly with sugar
- 6 mint leaves
- 2 teaspoons granulated sugar
- 1 1/2 ounces white rum
- 3 ounces sweetened lime juice
- 1 ounce club soda

- 2/3 C. heavy cream
- 12 oz. squares or bars semisweet or bittersweet chocolate, chopped
- 2 T. butter
- 2 T. rum
- 1/3 C. unsweetened cocoa powder

- 1/2 C. powdered sugar
- 2 C. water
- 3 egg yolks
- 4 oz. softened, unsalted butter
- 2 C. of milk
- 3 egg whites

Keralite Jhinga

Mix shrimp, coconut milk, ginger root, karhi, salt, chiles, and tamarind paste in a medium bowl
- 1 lb. (16 to 20) uncooked extra-jumbo
- shrimp, peeled and deveined
- 1/2 c. coconut milk
- 1 tbsp.finely chopped gingerroot
- 1 tbsp. chopped karhi leaves, or
- 2 tbsp.finely chopped cilantro
- 1 tsp. salt
- 2 fresh Thai, Serrano or cayenne chilies,finely chopped
- 12 tsp. tamarind concentrate paste,
- or 2 tbsp. lime juice
- 2 tbsp. vegetable oil
- 1 tsp. black or yellow mustard seed
- 8 medium shallots, thinly sliced
