CAPELLINI - TOMATOES, CAPERS, AND OLIVES

1. In a large saucepan, immerse one tomato at a time in boiling water until the skins loosen (about 1 minute)
- 2 lb. ripe tomatoes
- 1/2 pkg. capellini pasta
- 1/4 C. extra virgin olive oil
- 1 T. minced garlic
- 2 T. capers, rinsed, drained
- 20 pitted kalamata olives, halved
- 1 tsp. kosher salt
- 1/2 tsp. coarse ground black pepper
- 2 T. snipped fresh basil
- Parmigiano Reggiano, grated
Poached Flounder with Melted Butter Beans and Meyer Lemon Essence

In medium saucepan, bring water to simmer
- 1/2 cup bottled spring water
- 1/2 pound butter, cold and cubed
- 4 fresh flounder fillets, about 6 ounces
- each
- 2 cups fresh butter beans, shelled and
- peeled; frozen may be substituted
- 1 cup ham stock
- 1 Meyer lemon, juiced (regular lemon
- may be substituted)
- sea salt and cracked black pepper
- optional: seasonal vegetables, blanched
- and seasoned with salt and pepper
- For garnish: fresh herbs, sea salt and
- cracked black pepper
- 2 teaspoons extra virgin olive oil

SLOW-COOKED LEMONY LEEKS

1. Slice leeks in half lengthwise and clean well under cold running water
- 4 or 5 large leeks, white part only
- 2 tbsp (30 ml) olive oil
- 2 tbsp (30 ml) dry white wine
- 1/4 cup (50 ml) fresh lemon juice
- 1 cup (250 ml) chicken or vegetable stock
- Salt and pepper to taste

- 1-2 T. orange-flavored liqueur,
- such as Grand Marnier or Cointreau Sifted unsweetened Dutch-process cocoa powder
